Spanish Potato Salad
Serves 8
6 cups - New potatoes, sliced and cooked
1/2 cup - celery, sliced
2 - red onions, sliced thin
4 - Oranges, sectioned
Salad greens (optional)
1/3 cup - Mayonnaise
1/3 cup - Sour cream
1/2 cup - Orange juice
1/2 teaspoon - Tabasco pepper sauce
Arrange mixture of potatoes, celery,
onion and orange sections in salad bowl lined with salad greens.
Chill. Combine remaining ingredients to make dressing.
When ready to serve, toss salad dressing with salad
coating each piece. Season to taste with salt and
additional Tabasco sauce. |
