Rhubarb Relish
A good condiment. Try with hot dogs, hamburgers and other meats.
5 c rhubarb, chopped
5 c onions, chopped
2 1/2 c cider vinegar
6 c brown sugar
1 Tbsp table salt
1 tsp pepper
1 tsp cinnamon, ground
1 tsp cloves, ground
Put rhubarb, onion and vinegar into a large saucepan. Bring to a boil over medium high heat. Cook, uncovered for 20 minutes. Stir often.
Add remaining ingredients. Stir. Continue cooking until thick, stirring often, about 30 minutes more.
Pour into sterilized pint jars to within 1/2” of top. Place syterilized lids on and screw bands on securely.
Process for 10 minutes in a HWB.
