Basil Grilled Chicken
Ingredients
Press pepper into meaty sides of chicken breast halves. Combine chicken broth, grape juice and 1/4 cup chopped basil: stir well. Brush chicken lightly with mixture.
Combine mayonnaise, minced basil, Parmesan cheese, garlic and salt in a small bowl. Stir until well blended. Transfer to a small serving bowl; set aside.
Grill chicken over medium coals 8 to 10 minutes on each side, basting frequently with remaining basil-broth mixture.
Serve grilled chicken with basil-mayonnaise topping. Garnish with fresh basil sprigs, if desired. Yield: 4 servings.

3 tbsp. fat-free chicken broth
2 tbsp white grape juice
1/4 cup chopped fresh basil
Topping
1/2 c. low-fat mayonnaise or Vegannaise
2 tbsp. minced fresh basil (lemon basil if you can get it)
2 tbsp. grated Parmesan cheese
1 garlic clove, minced
1/8 teaspoon salt
fresh basil sprigs (optional)
