Rosy Cider Jelly
3 cups apple cider
1 cup cranberry juice
1 tsp. Lemon juice
1 package of fruit pectin [powdered]
5 cups of sugar
In large kettle combine the first 4 ingredients. Bring to a rolling boil
Over high heat. Stirring constantly. Stir in sugar. Return to full rolling
Boil for 1 minute.stirring constantly. Remove from heat and skim off any
Foam. Pour hot liquid into hot jars, leaving 1/4 inch headspace. Adjust
Caps. Process for 5 minutes in boiling water bath. Yield 6 1/2 pints.
Note' I found that adding 1 tsp of butter or margarine that the foam comes
Out very easy and sometimes there is no foam at all. |
