Yogurt, lemon & poppy seed bread
1 C each whole wheat and all purpose flour
1 1/2 T poppy seeds
2 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1/4 C sugar
1 large egg
1 T veggie oil
1 container (6 oz) nonfat plain yogurt
3/4 C nonfat milk
2 tsp lemon extract
Heat oven to 350 degrees F. Spray 8 1/2 x 4 x 2 1/2 in
loaf pan (5 cup capacity) with nonstick cooking spray.
Mix flour, poppy seeds, baking powder, baking soda,
salt and sugar in a large bowl. In medium bowl, whisk
egg, oil, yogurt, milk and extract until blended. Add
to flour mixture and stir until just blended. (Don’t
overmix) Scrape into loaf pan.
Bake 45 mins or until a wooden pick instered into
center comes out clean. Cool in pan on wire rack 10
minutes before removing bread from pan to rack to cool
completely.
Yield: 1 loaf (12 slices)
Serving size: 1 slice
Cal: 105
Count as 1 bread/starch; 1 fat
Note: Commercially prepared breads adn muffins may
contain up to 400 cals and 20 g of fat. Ouch!
