We're all itching for those greens growing in our
gardens, and many also have strawberries. Here's a way
to use them in a healthy way from Weight Watchers.
Turkey Strawberry Salad
Prep time: 15 mins; Cook time: 5 mins; Serves 2
1/2 pound turkey cutlets
1/8 teas salt
1/8 tsp freshly ground pepper
1/2 teas olive oil
2 C halved hulled fresh strawberries; about 12
1/4 C fat free Catalina salad dressing
3 C baby spinach
Season turkey with salt and pepper; heat oil in medium
nonstick skillet over medium high heat. Add turkey and
cook until golden and coked through (2-3 mins on each
side.)
Transfer to a cutting board and let cool slightly,
about 5 mins.
Meanwhile, put 1/2 C of the strawberries and salad
dressing in blender and puree.
Cut turkey crosswise into 1/2 inch strips. Place 1 1/2
C spinach on each of 2 plates. Top each serving with
half the turkey and 3/4 C of remaining strawberries.
Serve at once with the dressing.
