White Chocolate Apricot Scones
1 3/4 cups flour 1/4 cup sugar 2 t. baking powder 1/4 t. salt 1/3 cup butter or margarine 1/3 cup finely chopped dried apricots 1/3 cup white vanilla baking chips 1 egg About 1/3 cup half and half Additional sugar if desired
Heat oven to 425. In large bowl, mix flour, 1/4 cup sugar, the baking powder and salt. Cut in butter, using pastry blender or crisscrossing 2 knives until mixture resembles fine crumbs. Stir in apricots and baking chips. Stir in egg and just enough half and half so dough leaves side of bowl and forms a ball. Place dough on lightly floured surface. Knead lightly 10 times. Pat or roll into 8" round on ungreased 12" pizza pan or cookie sheet. Cut into 8 wedges. Do not separate. Sprinkle with additional sugar. Bake 16 to 18 minutes or until golden brown. Carefully separate wedges; remove from cookie sheet to cooling rack. Serve warm if desired. Makes 8 scones.
