Quick Apple Carrot Bread
1-1/2 cups (2 medium) peeled, shredded apples 1/2 cup (1 medium) shredded carrot 1/4 cup butter 1/2 tsp. lemon extract 2 eggs 1-3/4 cups flour 2/3 cup sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 chopped nuts
Heat oven to 350. Grease bottom only of 9x5 or 8x4 loaf pan. Blend first 5 ingredients. Add remaining ingredients, except or nuts. Beat 3 minutes at medium speed. Stir in nuts. Pour batter into prepared pan. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf.
