
I made a wonderful soup tonight. Afterward I got to thinking about the way we cook.
I have so many recipes , but I almost always adapt them a bit to suit myself. Sometime I start out with an idea and come up with something I have never tried before. That's what happened today.
I thought a pot of potato soup would be good. But after I got started I got inventive.
Here is what I came up with:
I peeled and cubed about 12 red potatoes
Put them in a pan with a can of chicken broth and water to cover.
Added some dried onion, and boiled until the potatoes were done.
Meantime I boiled a chicken breast. When the potatoes were done I added a can of evaporated milk, a stick of butter, salt, some celery flakes I had dried this summer , a few dried carrots and peas and the chicken ( Cubed).
Still wasn't satisfied. So I added my favorite seasoning, McCormick's seasoned pepper-all and a few dashes of Smokey Chipotle Tabasco.
Talk about good. It really hit the spot.
Now I just need to name it something before the kids do. I started many years ago with my own version of a green chile stew that i used Ro-Tel tomatoes in. The kids loved it and always called it " That Stuff Momma Makes With Ro-Tel". The middle daughter even put it in the church cookbook under that title!
I am open for suggestions, any ideas?
