Cinnamon Apple Cake
1 cup flour 1 cup dark brown sugar 1 cup granulated sugar 4 tsp. cinnamon 1/4 cup oil 1 tsp. salt 1/2 tsp. ginger 1 tsp. baking soda 1 tsp. baking powder 2 apples, peeled and sliced into bite-size pieces 1 cup buttermilk 1/4 cup nonfat egg substitute
Grease 9x13 pan. Combine flour, sugars, half of the cinnamon, the oil, salt and ginger. Transfer 1 1/2 cups of this mixture to a small bowl and add the rest of the cinnamon to it. Set aside for the topping. Add the soda, baking powder, apples, buttermilk and egg to the flour mixture. Do not over-stir. Pour into prepared pan and sprinkle the reserved topping on. Cover with plastic wrap and foil and freeze up to 3 months. To bake, thaw at room temperature before baking. Preheat oven to 350. Bake for 1 1/2 hours or until the cake is set and the top is golden brown. Serve warm or at room temp.
