DRYING PEARS
Core the pears and slice them lengthwise into 1/4" slices.
I then soak the slices in OJ for a few minutes so they don't turn brown in the dryer. A fruit fresh dip will work as well but the slices won't be as tasty. You can also use pineapple juice as well - also quite good. They don't need more than a two or three minute soak so just soak them while your preparing the next pear, and keep using the same bowl of liquid.
Lay the slices out on the trays and dry at ~125-130° until they are leathery, about 8 to 12 hours. Don't over dry since these are for snacks. Sample often and when they are a nice sweet chew take them out of the dryer.
I love the canned pear slices in heavy syrup - I just drain them and roll them in orange jello. They are just like candy. |
