Vanilla Crock Pot Cake
Yield 6 servings
Ingredients 6 Tablespoons unsalted butter, softened 1/2 cup granulated sugar 1 large egg 1 cup flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1/4 cup milk 1 teaspoon pure vanilla extract
Method Cream butter and sugar until fluffy. Add egg and mix well. Combine flour, baking powder and salt. Add dry ingredients, milk and vanilla to butter mixture. Beat just until blended. Put batter into greased and floured 1-pound coffee can. Set in crock pot and cover with 2 paper towels. With cover slightly ajar, cook on high 2 hours or until toothpick inserted in center comes out clean. Remove can/insert from crock pot and cool on cake rack for 10 minutes. Invert cake onto cooling rack, cool to room temperature and serve with strawberries and whipped cream. |

I definately want to try the crock-pot cake, and the black-eyed peas and sausage sounds pretty good, too!
