SUGAR FREE PINEAPPLE CREAM PIE
Crust:
20 estee vanilla cookies
3 tbl margarine
Crush cookies and combine with margarine. Press into 8 or 9 inch pie pan. Bake 6 to 7 minutes at 350*. Let cool.
Filling:
1 box sugar free instant vanilla pudding 1/2 tsp cinnamon
1 1/2 c milk 1/4 tsp nutmeg
8 oz. light cream cheese, softened 8 oz. can crushed pineapple
1 tsp vanilla
Drain pineapple and reserve juice. Add milk to pudding mix and beat until thick. Add cream chease, vanilla and spices. Blend until smooth. Fold in drained pineapple and pour into crust. Chill for 2 hour and then add topping.
Topping:
1/2 c sour cream 2 tsp pineapple juice
1 tsp vanilla 12 tsp cinnamon
Mix and spread on chilled pie. |
