White and Brown Rice
Rice is a low-cost, nutritious and stable food that can be prepared in a variety
of ways to add interest to any meal. Because white rice is somewhat bland, it
can be added as an ingredient filler to meat loaf or croquettes or combined with
leftover vegetables, spices and perhaps cheese to further extend your grocery
supply.
Brown rice, which still contains the germ of the grain, is a little crunchy and
has a slightly nutty flavor. Wild rice can be served plain or as more commonly
found in combination with white or brown rice and seasonings. Instant or minute
rice has been precooked and dried so that it can be rehydrated in usually about
5 minutes.
Raw white rice may last indefinitely on the shelf, although it should be used
within one year for best quality.
Brown and wild rice have a shelf life of approximately 6 months due to the fat
in the germ which tends to be more prone to rancidity and insect infestation. |
