Back in 1955 our little country church needed to add a couple of Sunday School rooms. The ladies raised the money for the project and the men built the add on. My grandma, Gladys Logan Thompson, gave the ladies her wonderful fried pie recipe. I remember gathering at one of the ladies house every Saturday and playing outside while the ladies made these pies. This is Grandma's recipe.
Fried Pie Dough
5 cups sifted flour
1 tsp. salt
2/3 cup sugar
4 tsp. flour
2 tsp butter
baking powder ( does not specify how much)
1 cup shorting
Mix all first five ingredients together . Beat 2 eggs into a tall can of milk and add to dry ingredients. Makes 45-50 fried pies.
Pineapple Filling
1 large can crushed pineapple
1 cup sugar
2 tbl. flour
2 tbl. butter
Strain pineapple. Cook other ingredients until thick. Add pineapple. Put in pie crust and fry until browned. |
