HOMEGROWN TOMATOES When home-grown tomatoes come in, take a really red, ripe, juicy tomato, slice it thick, and lay the slices on a plate. Sprinkle with a little kosher salt and fresh ground black pepper, a pinch of garlic powder (optional), and a several tablespoons of fresh chopped cilantro. Cover with plastic and place in the refrigerator. Do this overnight or first thing in the morning. By lunch time, the tomatoes have macerated and the flavors have blended, and it makes a fantastic, super light lunch! I used to do this in the morning before I'd go to work, then get off for my hour break and dash home for my yummy salad. For supper, I sometimes put a little sliced cold chicken or turkey with it, and lettuce leaves. SO refreshing in summertime, and SO GOOD! ~Liz |
