Does anyone besides me like to dehydrate things?? I love to dry veggies in the summer for soup later. I try to watch for sales on colored bell peppers. They dry so pretty. I have a bunch chopped and in the dehydrator right now. Yellow, Red and Orange pepper mixed with the Green make a pretty jar of peppers to use in sauces, soups, stews and meatloaf later.

My husband bought a dehydrator years ago, and we no longer have the operating instructions or times, recipes etc.... :(

I don' t think I've ever used it --- we made jerky a few times when he first got it--

But for peppers....how long would you have them in for --and them just seal in canning jars or how do you store ?

I would love to be able to use that dehydrator! :)

Do you know of any good books ?

I lost my book that comes with the machine. But I just dry things until I decide they are dry enough. I do have a good book. I will find it and post the name here for you.

I just put them in pretty jars I have saved with good tight lids. They seem to last fine. If they are dried to long they lose color, not long enough and they mildew.

I make fruit leathers, beef jerky and other goodies. I dry some of my herbs in it. Also orange and lemon peels.

Things dried have a stronger more concentrated flavor than fresh. So you use less.

Okra deies real nice and taste great in soup as does squash.

I will try to answer any questions you have about this. Another good reliable source for drying is the Bell blue Book. It tells you how to can and dry different things. ^..^

I have just started using my dehydrator this year. It was actually given to me as a gift about eight months ago. I have really enjoyed the few things I have dried on it. We have dried apples and made fruit roll ups. Just this week I used it for the first time for carrots and celery. Have you run across anything that was unsuccessful drying?

I tried strawberries and bananas . That did not work out for me. They were to hard to chew, maybe I should have pretreated them or dried them less?
