Taking a Break from Regularly Scheduled Horse Posts

    Well I thought I would take a break from horses since there is really nothing to tell about the Girls. I thought I would post some homesteady things.
    I made bread the other day for grilled cheese for lunch. We use the old red Betty Crocker Cookbook that Mom has had for a long time. That is one thing I plan on having in my kitchen cupboard. Along with my own recipe book.
 
Here is one of my favorite dishes to make and eat: Fried Fish with Home fries, Green beans, zucchini, or salad.
    I made up my own batter recipe a couple weeks ago. It works really well for fish and chicken. It is really crispy.
    Batter:
    2 Cloves of Garlic
    1/2 Onion   
    1 cup of Cornmeal
    3/4 cup of Whole Wheat Flour
    1 tsp of Cumin
    1 tsp of Red Pepper
    Put  first two ingredients in food processor and puree well. Then add rest of ingredients, mix well.
    Put ingredients in bowl and put fish or chicken in batter. Put organic shortening or organic oil in hot pan and bring to high heat. Put batter fish or chicken in pan and fry to golden brown. Salting as needed.
 
    Make sure you keep the batter dry, otherwise it will not stick as well to your fish or chicken. I usually put the batter back in the processor and add more cornmeal to keep dry. I have found the more cornmeal the better the batter.
 
    Home Fries:
        Wash potatoes in water. Cut into cubes. Heat up your shortening or oil in iron skillet. Put potatoes in pan and let sit til the bottom layer is golden brown. When you mix them up, take a flipper and scrape bottom of pan and flip the potaoes over. Make sure you put the top layer on the bottom and vice versa.
    Season with red pepper and salt and serve.
 
    (Frozen) Green beans:
        Place green beans in iron skillet with an less than an inch of water.  Cook. Season with Braggs Amino Acids, turkey bacon, and onions. Serve
 
    Fresh Zucchini:
        Cut into thick julienne slices, put in pan with 1/2 inch of water. Season with Braggs Amino Acids. Serve
 
So there you have a complete meal. I love this dish. I like my fish with a side of ranch dressing.

sorry - i am so rude. how about something like egg rolls and sweet and sour chicken? this is paulie's suggestion. paulie is now saying to please tell you to make egg rolls and orange chicken. you know? i know how to make sweet and sour chicken...i love rice, too. but if you make fish i am going to die...and i mean DIE. do you want auntie to die? didn't think so. EGG ROLL LOVERS UNITE!!!!!!!
