This years canning (pics)

Below is this year's canning ~   First picture is the whole shelf, about 15 feet long or so, the others numerical from right to left ~  
 
Picture 2 has the dilly beans (12 pints) , pickles (21 quarts, 5 pints, 1 half pint) and the 3 bottles of chive vinegar I made (in the wine rack).  Picture 3 is the grape jelly (10 jars), blackberry jam/sauce (7 jars), and the strawberry jam (10 jars).  Picture 4 has the homemade ketchup (four half pints), relish (5 pints), cranberry beans (2 quarts) and stewed tomatoes (8 pints).  Picture 5  is the end of the shelf which is apple jelly (10 jars) (right), 2 applesauces (pink and yellow ~ 15 pints altogether) and the kidney beans (3 and 1/2 quarts) (left). 
 
We've already gone through a jar of strawberry jam and have an apple jelly in the fridge.  We also have gone through a half pint of relish already.  Still finishing off the grape jelly from last year.
Some of our onions are seen hanging too...
 
Looks pretty impressive on the shelf, lol...and of course we have one freezer chuck full of frozen veggies and even spilled into the big freezer...thought you'd find this amusing.  What a social life I have, huh?

Oh, you are making me jealous!

We had only a few plants of tomatoes and potatoes because we went on vacation the first two weeks of June... and so it was pitiful! But I am planning a HUGE garden next year.

Momma and I did can some peppers and tomatoes last year. I loved it! I love growing tomatoes and peppers. They are so easy. Wanna post the recipes you used for the pickles? Not sure if I'll can the cucumbers I'll be growing next year, but it'll be good to have some recipes. :)

Canning

WOW! You go girl. I have canned only jams and jellys, here in colorado you need to do a water bath FOREVER do to the altitude and I was thinking about buying a pressure canner to do things like tomato sauce. Do you use a pressure canner? How did you learn to can? I have a few books on it but there is nothing like someone teaching you.

God has truly blessed you and your harvest. Congratulations on all of your hard work.

I just bought a pressure canner this year...

...and I've only used it on the stewed tomatoes thus far...everything else I've canned thisyear will take a water bath. I plan to can more veggies next season. As for how to use the canner? I read the instructions and hoped for the best! I did ask a few people here to make sure that the "jiggle" was right. It is nervewracking though. But it seems to have worked fine.

There is nothing prettier than a beautifully preserved harvest~ Nice job! We too garden and can everything possible and enjoy the bounty of our labor for many months. Isn't it fantastic. I am already anxious for planting season! We always begin planning our garden after New Years. Last year we began planting an orchard as well. We are adding 4 more trees this spring and having to replace 3 as well, thanks to my teen boys and a go-cart... tee hee. Would love to swap ideas and recipes with you sometime!
