Leftovers?
* Hearty Chili Pie-Pour 4 cups extra chili in a deep pie dish. (Add one cup of corn if you have a little less than 4 cups.) Prepare cornbread recipe according to directions. Drip batter over chili. Bake at 375 degrees for 30 minutes or until the cornbread is done. Sprinkle with shredded Cheddar cheese.
~ now dh has done a similar recipe on the stovetop using a biscuit batter; think I'll go see if I can find that one and post it for ya.
*Cut leftover meatloaf into chunks and add them to a jar of spaghetti sauce to make speedy spaghetti and meatballs.
*Spicy Hash. Dice leftover roast beef, roasted potatoes, carrots and onions. Add bread crumbs until the consistency is such that you can shape into cakes.
*Dice leftover chicken and mixed vegetables with refrigerator biscuits to make delicious turnovers.
*Freeze leftover mashed potatoes in small portions in freezer bags; use to thicken soups and stews.
*Use leftover pork and beans to make open-faced sandwiches and top with sliced cheese and melt.
*Mash any leftover beans and make refried beans. Serve with rice or tortillas.
*Mash leftover beans and add to meatloaf.
*Make fried meatloaf with leftovers in a pan of sauteed onions, add tomato sauce and peas.
*Grind leftover roast beef, stew meat, etc. in your food processor. Add to scrambled eggs, with leftover potatoes for an easy and hearty breakfast.
*Add leftover cooked rice to pancake batter for a hearty breakfast.
~ you can use leftover cooked rice and make rice pudding. Yummy!
Time Saving Tips
*Have family members help - with cleaning and chores - this will save time and you won't have to clean the kitchen before the next meal.
*Try exchanging meals with another family - cook double and trade the extra.
*When unloading the dishwasher, set the table for the next meal.
*Make simple meals - one dish meals can contain your meat, vegetable & the bread.
*Put away containers and clean up as you cook.
*Plan ahead, do as much as you can the night before.
*Cook Once, Cook Big - make large batches and store for later use.
*Buy staples that you use often in quantity.
*Make double or triple the amount when you prepare main dishes - label and freeze.
*Store cooking oil in a plastic squeeze bottle - like the kind used for ketchup. This way you don't have to stop and unscrew the cap in the middle of making a recipe.
