Happy Birthday America!  Today I am especially grateful for the wonderful freedoms we enjoy.  The freedom to worship, the freedom to praise God, the freedom to own our own property and live and work as we wish. For all these freedoms and more I very thankful for!

I pray each one of you enjoys a blessed & wonderful day!

Praying for the Sun to Make an Appearance Today!!!

Happy Birthday America!!!!  Let's all cheer for the Red, White and Blue!!!  I love the Fourth of July, and the cookouts, family gatherings, and fireworks.  But this year, we aren't sure if there is going to be much fireworks.  We might be able to still arrange the cookout, and just eat indoors.  But is is difficult to celebrate with fireworks when it is raining!!  UGH!  The weather reports aren't sure if the rain will stop before sunset and the big firework displays or not.  DARN IT!

Matthew took off earlier this morning with our Noah, 3 years old, to pick out some fireworks.  We always wait until the 4th to buy ours because of the wonderful sales they hold the day of.  He alsos picked up some sausage and milk on the way home for our breakfast....sausage gravy and biscuits!!  YUMMY!  He even made breakfast for us.  Matthew never cooked (except for Hamburger Helper) until he met me.  LOL  Now he is the breakfast expert and won't let me in the kitchen when he is making pancakes or his specialty of biscuits and gravy.

The rest of the day we are going to hang out, relax (finish putting away laundry, do a few dishes) and just enjoy having daddy home!   Tonight we are going to my brother's house for a cookout (possibly cook in...depending on the whether), and then back to town for the city wide fireworks display.  I am looking forward to seeing my family today.  We are all so busy, and it seems working schedules conflict that we don't get together more often.  Looking forward to seeing how big my neice Megan is getting with her first pregnancy.  She is due in October, and I am sure she isn't much bigger than her little frame was before, but maybe a tiny bit.

Matthew's family is all scattered this weekend.  We made a comment last night that if everyone wasn't gone, we would have loved to get them all together at our house this weekend.  Oh well.  His parents church is having a 3 day meeting, his sister lives in Washington,DC area and unable to come home, and his other sister, her hubby and 5 year old daughter just started their 5 day trek back to Missouri from California and today.  They visited Sea World, Disney, etc. and had lots of fun.  I can't wait to hear about their trip!

Define Love

Posted on Saturday, July 4, 2009 at 10:59 by Regina Scott - 1 Comments - Post Comment - Link

How do you define “love”? Is it a feeling? Is it a need or an urge, or maybe a feeling of bliss or contentment? My personal definition for love has undergone a radical evolution this year. Whether by God’s hand or just as a bonus from the aftermath of a struggle I can’t really be sure.

By chance or by design, yet not fortunate under any circumstances, during this time of loneliness and sadness in my life, in walked one of the most difficult temptations there is for me. The old flame. All of the flattery and wooing stirred up old feelings and sent shameful fantasies running through my head. So, I did the only thing I could think to do. I firmly stated my love for my husband and my God and I walked away. Then when my mind was tormented by confusing and contradicting thoughts, which it seemed to be continuously for a time, I got on my knees and cried to God. He didn’t really answer much. My impression was more of Him just sitting there with me, waiting to see what I would do.

(I must admit that in the silence I was bombarded by voices that made me doubt God and His existence. I know now that it was the enemy that tried to tell me to just give up on God.)

That is when I started thinking about “love”. How is it that I can love and be devoted to my wonderful husband and then at the same time think that I might have love for another? Well, I guess that depends on your definition of love. If I define it as a feeling- of excitement, pleasure, or simply attraction- then I guess it is possible. But what about the times that those feelings fade back and the excitement dies down to the quiet thrum of life?

Are our marriages really meant to sustain our feelings and happiness or are they really for another purpose entirely? I asked myself what I have when those feelings are not overwhelming me.  I have something even more beautiful. I have a partner. I have a teammate. A commitment, and someone to share even the most mundane parts of life with. I have someone to share the bruises and scars of life with. I have someone to share in my story. We have one story to tell, with a shared history, a shared now, and a shared future. Even when he is across the world, we are one unit, one family, a new creation.

You don’t walk out on your team because a game isn’t going your way. You train harder. You train harder TOGETHER and you come back to the court or field the next season and you battle on. I have enjoyed the picture of marriage I have had in my mind of wine aging. It didn’t start as wine. It was grapes. Single, individual, very separate little grapes. Grapes that had to be stomped on and crushed until they were pressed into something new and mixed together, and then aged until they were yet again something new.

So, I am left with another question. How can you show or give love if you have a limited definition?

With my previous definition of uncontrollable and effortless emotions, I shouldn’t ever have to do anything. Love should just effortlessly come to me and whoever else claims to be in love with me. But that isn’t right is it?

As I am sitting here looking at what I have written, I realize something. It is the same with God. To love Him is not a constant effortless state of euphoria. It requires effort and sadness at times. Yet, He is not going to ever walk out on us even if we are in a less than exciting stage in our lives. If there is anyone who understands commitments, it is a God of covenants.

Fourth of July Plans & Menu

Posted on Friday, July 3, 2009 at 07:23 by blessed mom - 2 Comments - Post Comment - Link

I have been planning our weekend.  Tomorrow we will enjoy a quiet day at home.. just family ( all 12 of us!).  We always enjoy a special meal on America's B-day.. so this year I will be making grilled steaks ( a rare treat) , baked potatoes, homemade baked beans, watermelon & homemade apple pie! It's not the fourth w/ out homemade apple pie!

Sunday our Church is holding an evening meeting and then a potluck meal. I'll be brining watermelon, lemon meringue pies and spinach salad. The girls are making cookies & cupcakes.  We are also going to bring a pinata & water balloons!  It should be a fun evening!

Fourth of July is one of our favorite holidays!  We sure enjoy celebrating and taking time to remember how blessed we are in this land of the brave and home of the free!  I am also thankful for the freedom and perfect law of liberty thru Christ our Lord ! Jesus died so ALL men could be set free!  How grateful  I am for that!  We are no longer under the bondage of the law -- but are free thru the grace and liberty in Christ! Thank you Jesus for your precious blood shed on calvary so all men can be free!

Hope you all enjoy a blessed Holiday!

Germs and The Days Plans

Posted on Friday, July 3, 2009 at 11:47 by amanda - 1 Comments - Post Comment - Link

 Today and everyday!

Good Friday afternoon Friends and Family~

I pray this day finds you all well and healthy. We are doing well today but some of us are not so healthy. This has been a *germy* week around our house. There is a nasty cold going around and it all of the kids have it.

DD (18) picked it up from the camp she is working at. She said that there were A LOT of sick staff there last week. Some so sick that they couldn't get out of bed. She just managed to to get the sore throat and cold symptoms from it. She was able to keep going the rest of week with it and did a good job of not complaining.

The other 2 kids have had a harder time with it. Dd (15) has been really tired and just wore out from it. DS (10) had a really bad night of it last night with his asthma. All head colds always end up in his chest and it just brings on the asthma.I took him to the Dr. this morning and they gave him some antibiotics for it. Prayerfully he will be better soon as well as DD (15).

Hubby is off today. A good thing and a bad thing at the same time. It means less money for next weeks paycheck, but more time with his family. I'll take the time with us over the hours lost. GOD will take care of our needs and always does.

Hubby is also out visiting with some shut ins from our church. He took them some butter and milk. The lady he is visiting is about 80 years old and always had a cow when she was able to get out and about. He thought she might like some *old fashioned* milk and butter. Nothing is better than that in my opinion.

I've had to change my plans for the 4th. We were to go to the beach tomorrow (a 4th tradition.) With 2 sick kids, we will have to forgo the beach for the weekend. We are blessed though in the fact that we can go when they are feeling better, seeing we live about an hour away. We'll just stay home and take care of some *undone business* around the house (there is ALWAYS UNDONE BUSINESS AROUND HERE.)

Here is what the rest of the day holds for me:

~Cook and debone chicken for Sundays dinner
~ Make a dessert for tomorrows dinner
~Make butter
~ Cut grass and weed eat
~ Make a Homemade pizza for dinner tonight
~ Then there are the *usual* days activities to deal with

Have a blessed day in THE LORD! Stay safe this July 4th weekend! Pray for our country and for our President's salvation!

7-2-09 Up-date

Posted on Friday, July 3, 2009 at 01:05 by m j - 0 Comments - Post Comment - Link

Kristi was board earlier today and decided to play wii.  She played monopoly with Hope!  Hope is our soon to be 10 year old golden medical alert service dog.  We train the dog to all kinds of stuff some funny and silly but this is too much!

Titus is doing great in his service dog training.  We took him out for the first time to go shopping and he was wonderful.  If we stopped and looked or spoke to someone he would lay down with out being told to.  I thought it was odd, so I kept testing him.  I would walk and stop not look at him he would just lay down .  That is amazing for a six month old puppy to do on his first outing in stores.  I wonder if Kristi is going to teach Titus to play monopoly??

We start training them as soon as they are born.  Also having good parents helps too.  It took me two years to find his parents, to find the lines I was looking for.  Now we need one more female golden.  We might get one from Alex's breeder.

Blessings, Mj

Okay, Janet is in trouble she let Kristi and Mya run free on the mountain.  Worse yet with a camera .  Here are some pictures of the adventure.

1. Is Kristi finding out there are more than one of her:

2. Mya discover pine cones, do pine nuts come from pine cones??:

3. Is Kristi playing cars (she is the car)

4. Maybe I will be a better car sitting down??

5. Better yet I will play speed bump!! Did I send Kristi with her insuance card???

6. Mya discovers a cow and gives it a kiss !!

7. Milk comes from here ???? I know the poor thing , will she ever get over the shock???

8. Then they made friends with the locals:

JANET!!!!, we do not let the girls play speed bump in the middle of the Road!!! /.    We need to let the girls out of the house once in a while.  Poor Mya was so lost as to where milk comes from!! And did not know what a pine cone was!!!   Poor Kristi she thought there was more than one of her!!  Look at the locals nails on that local, see how long they are?? They could hurt the girls!!

Sorry but I had to write and show the pictures , they are so cute.  I will show more latter.

Blessings Mj

Thankful Thursday

Posted on Thursday, July 2, 2009 at 04:21 by Shaune - 3 Comments - Post Comment - Link

It is a very hot one indeed outside. I an thankful for the gentle breeze . I woke early to get  some chores done. The heat is great drying cloths on the line . Which I very thankful for. I am thankful that I can afford to have AC on in my home to keep cool . I couldn't afford to run the dryer even if I wanted to . So for me the choice is simply "Solar Dryer " . And it does a great job !!! Very Frugal !!!

I have been canning tomatoes and salsa small batches at a time . This is much easier on me . I used to wait and do large batches of tomatoes . But this got to be way to much to do in one day . Plus ,trying to keep up with other household chores .  I dried some bell peppers and froze some . I have been cooking with them everyday . They are very crispy and crunchy this year !! Great for dipping in Ranch !!!! I almost have enough okra to fry some(I hardly fry anything ) . This is the first batch , just coming in . I plan to freeze the rest for gumbo in the winter .

Here is a Tip from the Tiptionary : Crystal Light , make your own product with these ingredients . 1 cup lemon or lime juice ,5 cups cold water ,5 packets of sweeterner (any brand or type you like ).Mix in a pitcher ,serve over ice ,and enjoy !!!!

Cooler : Keep a cooler in the trunk of your car .You can stop for groceries with out having to to straight home. This is also a great idea during the summer months for keeping  bottles of water and snacks on hand while running errands . You will save lots of money from the convenience of your own cooler . And skip the high prices at the Convenience Stores .

Have a Happy and Safe 4th of July !!!!  Shaune

The Harvest Is In!

Posted on Thursday, July 2, 2009 at 09:38 by amanda - 0 Comments - Post Comment - Link

Good Thursday Morning Fellow Homesteaders! What a beautiful day it is today. Not too humid but still pretty hot. We will be in the lower 90's again today. Such is the season here in southeastern NC.

The harvest here at Piney Woods Homestead is in. The corn is all picked and put up. We ended up with about 200 ears. I left it all on the cob because the ears were so small. It is a far cry from the 500 we were expecting. It is on the other hand the most corn that has come out of our garden in at least 5 years. I am most thankful indeed.

I am praying that the guy down the road from us will have a good supply of corn up for sale soon. I got about 3 bushels from him last year and it was really good corn. I will be thankful for whatever comes my way. A little or a lot.

The beans are also gone now. I ended up with about 10-12 gallon sized freezer bags. That is also the most our beans have produced in years. Again, I say," Thank you LORD!" for meeting our needs.

The tomatoes we planted have just started getting ripe enough to pick. I chose Romas this year because I wanted to learn to make my own spagetti sauce with them. Well, they seem to be getting black spot on them just as they are ripened. We have managed to pick a few, but not many. What we are getting will be used just to eat with dinners.Again, we have learned A LOT from this garden.

The taters are great! I picked some over a month ago and they are still on my cabinet with none rotting or sprouting. I am seeing how long they will last in my house without having to can them. Once I get a good idea of how long they wil last, we will dig the rest of them up and store them in our *tater box*.

Here is what didn't do so well at all;

Peanuts (A few plants came up, not enough though.)
Popcorn (a bust)
Cucumbers (enough to snack on as needed)

Our field corn that we wanted to use for chicken feed turned into squirrel feed! The little buggers dug up the kernels and ate them as the stalks were first coming up. We thought it was the birds at first. I found out it was the squirrels when I went down there after hearing crows in that area.( I thought they were the problem.) When I got there, I saw the little buggers feasting on the small stalks (seeds.) THAT little experience has also taught us a lot. Live and learn has become the motto for this Homestead. Experience really is the best teacher.

All in all I can say that this is the best garden that we have had in years. It has also taught us A LOT in the way of farming for a small family. Oh well, its now time to start thinking about the Fall garden.

Thank you LORD for meeting our needs and thank you LORD for all that YOU have taught us this summer season!

Blessings,
