4 cups chopped tomatoes
1 cup chopped onion
1 clove garlic minced (I used 1 tbs garlic powder)
2-3 tbs of Banana peppers--for hot salsa add Jalapeno pepper or Habenero
1 -2 tbs green bell pepper
1 tbs of canned green chili peppers--fresh if you have them( I used canned)
2 teas of sugar
2 tbs of vinegar or lemon juice(I use vinegar)
1 teas salt
1/4 teas ground cumin
1/4 teas ground corriander
Mix ingrediants in a pan, bring to boil....simmer 25 minutes. If you want a thicker salsa add tomato paste untill you get the desired consistancy.
After cooking I put slasa in my jars, and processed them for 25 minutes in my water bath canner.
I made 3 batches of this last year and canned 7 pints
