I'm so sorry that I don't have a picture to share of this wonderful cake, but it was inhaled very quickly last night! It's best to make and refrigerate for several hours or overnight.This was a cake that my grandmother made for my mom and husband on their birthdays. It turns a lovely green color and is perfect for St. Patrick's Day as well!
Pistachio Inside Outside Cake
Ingredients:
1 pkg. Yellow cake mix
1 pkg. Pistachio pudding
3 Eggs, slightly beaten
1 C. Oil
1 C. Club soda
1 C. Nuts, chopped (I used pecans, but you may use whatever you have on hand.)
Icing:
1 1/2 C Milk, cold
1 pkg. Dream Whip
1 pkg. Pistachio pudding
Additional chopped nuts
Icing Directions:
Add cold milk to Dream whip and dry pistachio pudding. Whip until thickened, about 5 minutes. Chill until ready to use.
Directions for Cake:
Preheat oven to 350. Grease and flour a bundt pan. Blend all cake ingredients, except nuts, and beat for two minutes at medium speed. Add nuts; mix well. Pour batter into prepared bundt pan. Bake for 50 minutes. Cool 15 minutes; remove from pan, cool on rack. Split cake into three layers. Spread frosting between each layer. Spoon remaining frosting mix into cake center. Chill. Garnish with chopped nuts.
What an unusual recipe. But I love pistachio anything, so maybe I will have to try it!!!!

Great for Christmas, too. Add cherries on top for a nice red-and-green cake. :-)
Wow - this sounds wonderful! We love pistachios.... how interesting with the pudding... I'll need to give it a try! Hope you are all staying warm, another snow storm is here......
