A Simple Saturday

It's been a quiet day today. It was chilly, but the sun came out, which was most appreciated. I am enjoying my walks to the mailbox where my seed and gardening catalogs are coming in. This afternoon, I curled up on the sofa to peruse them while doing a little spring dreaming. I also receive a new book to review almost daily, so I thought I took some time to read a bit and catch up on my writing.

The big news for today was the twelve eggs that were gathered from the chicken house! That was thrilling considering the lack of production these days. I've never had any luck with consistent egg production during winter though I try every bit of advice there is on the subject. I feel highly insulted to have to buy eggs when while giving such great care (and feed) to hens who won't cooperate, but today, they redeemed themselves. Let's hope it continues! I'd love to make some egg noodles. :-)

Egg noodles. I can't make a batch without thinking of my Aunt Ardith. She and I were kindred spirits and both loved chickens. She was a member of the Old German Baptist church. She grew apples and red raspberries and gave me a lot of advice and recipes, including egg noodles and angel food cake. She would stop over to visit, but would mail the recipes because "Everyone likes to get mail." I still look at the recipe cards in her handwriting and I'm so blessed to have known her. Not many get the chance to form such a relationship with a great-aunt. Though she was Gram's younger sister by five years, she went home to the Lord first.

Well, I want to get my Baked French Toast assembled and in the refrigerator, so it'll be ready to pop in the oven for tomorrow's breakfast. Here's the recipe.

 

 
Baked French Toast
8 eggs
2 cups milk
2 cups half and half
2 teaspoons vanilla
1/2 teaspoon nutmeg
1 teaspoon cinnamon
french bread, sliced to at least 1 inch thickness
 
 
For Topping
1 cup chopped pecans
1 1/4 cup brown sugar
3 Tablespoons dark corn syrup
1/2 cup melted butter
 
To Make:  Spray a 13" x 9" pan with non stick cooking spray.  Fill pan with closely packed bread slices.  Blend eggs, milk, half and half, vanilla and spices.  Pour over bread slices and refrigerate overnight. I go ahead and mix the chopped pecans and brown sugar and put them in a covered dish so in the morning it will be done.
In the morning take out the casserole; add your pecan brown sugar mixture.  Melt butter in microwave then add corn syrup and mix.  Drizzle over top. Bake at 350 for 50 min-1 hour. 
It will be puffed and golden brown.

I made your Baked French Toast recipe for our breakfast this morning. WOW!!! Delicious! You should have seen all the smile on the faces of my 4 kiddos! We will definitely be making this one again, perhaps on Sunday mornings before church. It's nice to have a nice breakfast on Sunday mornings without too much work. We were blessed with more eggs with our recent January thaw - I too feel embarrased to have to buy eggs during the winter and keep giving the girls (hens) pep talks. And you are not going to believe this, but my favorite aunt's name is "Ardith". lol I inherited her recipe box.

You inspired me. My much younger baby sister, just got married and has set up housekeeping for the first time. She has never had to cook before, so she's still learning and she calls me several times a week for recipes, especially the "family ones" since I inherited most of them. I've been wanting to get them to her and thought about putting a book together for her, but I think I may just start mailing them to her one at a time. Maybe include and old photograph with each one. Your Aunt Ardith was right, everyone loves getting mail, (when it's not bills). Thanks for the idea! God Bless!!

"SimpleFolk" comes from my love of simpler times and old ways. I have such a great respect for my ancestors. They were hard working, clean living "plain folks" who loved the Lord and left quite a legacy. I delight in clothes on the line, blue Mason jars, old wire baskets full of beautiful brown eggs, and anything with chipping paint. This is my journal for our daily life here on our farm. Farm Kitchen

I like my kitchen. The big shining stove with its friendly wood fire; copper kettle singing its contralto song; plump black pot with its bubbling savory stew.

The rich, golden smell of cornbread ready to take from the oven, blending with the piquant spiciness of hot gingerbread. I like the wide painted floorboards and the red geraniums in the windows; the little brown pots with trailing ivy.
The view of the road where I can watch the R.F.D. man drive up to the mailbox.

I like to see the table set for supper, the red cloth, blue napkins and cream colored dishes. The cat lies curled on the rocking chair cushion. Shep lies beside the stove watching every move.

Soon I'll hear his footsteps coming through the woodshed and the soft clink of milk pails. Storms may lash outside; here in my kitchen--all is warm and safe.

A FARMER'S NOTEBOOK ~~~~~~~~~~

SPRING: half-cold, half-warm the April wind tugs at the chestnut's mane; he sets his hooves deep in the earth and furrows are left behind. Swallows call wildly to their wheeling loves.

SUMMER: the tall corn talks in the amber day; the tiger lilies bloom in the river marsh. The hay is in, the timothy meadows sway beneath the crow's black crying, slow and harsh.

AUTUMN: the heifers come down from the golden hill; the dooryard rose-hips have the hardness of coral; supper smoke rises straight and the nights are a chill; beneath the red maple leaves the ground lies sorrel.

WINTER: before green dawn the lantern light in the breathing barn casts a circle of the color of honey; hills climb through stars, my acres are drifted white; and my heart knows the taste of a good year strong and sunny.
