Completely Possible Impossible Pies

I needed a quick and easy dinner last night and took a look at the back of my box of Bisquick and found a recipe for Chicken & Broccoli Impossible Pie.  I substituted tuna for the chicken and my family loved it~ NO leftovers!

Thought I'd share the info with those of you looking for a quick meal.

Recipes & Results

I've had a good day in the "make your own" category.  I'm pleasantly pleased!

 

I made 3 batches of the Cake Mix Cookies.  Chocolate, Orange & Butter Vanilla with Pecans.  They came out really nice & soft and were gobbled up as they came out of the oven.  I sent a bunch home with my mom.  I think the chocolate cookies would be really good as the outsides of an ice cream sandwich!!

 

Having had success with my cookies, I decided that instead of frying my pork chops as I normally would I would make up a "shake n bake" type rub.  I only rubbed half of the chops just in case they didn't turn out well and again, I was surprised and pleased!

Here is the concotion I used!

 

NOTE:  I rarely measure when seasoning so I have to admit that I kinda shook some here, poured some there, a smidge of this, a dash of that.....so..you'll have to use your own judgement....sorry!  I started with small amounts and then added, tasted, added, tasted.

 

Brown Sugar (quite a bit)

Paprika

Cayenne Pepper

Garlic Salt

Ground Black Pepper

Mild Curry Powder

Dry Mustard

Oil to moisten

 

Then rub your meat on both sides and bake in the oven.  I baked my boneless pork chops at 350 for about 20 minutes.

 

It's a sweet/hot flavor not exactly spicy but that could be adjusted with the amount of cayenne used.

 

DS9 said, "these pork chops are delicioso" & "can I have more".  The true mark of success...can I have more?!!

Cake Mix Cookies

Every time my local grocery has a BOGO on cake mixes, I pick a few up.  I'm not sure why since we *rarely* eat cake. 

In an effort to use up what's in my pantry before making any further unnecessary purchases I found a recipe that works for virtually any flavor cake mix:

 

1 Box Cake Mix (any flavor)

2 Eggs

1/2 Cup Vegetable Oil

*Any add~ins you desire = chocolate chips, m&m's, nuts, coconut, candy corn...well, you get the idea.

 

You can shape into balls or just drop onto a cookie sheet.

Leave 2" between cookies.

Bake at 350 for 10-12 being careful not to burn~they bake quickly.

 

I'm going to make a batch today.

"Faux-tatoes"...don't tell the kids it's cauliflower!

DH and I have had this wonderful dish before but, this is the first time I've made it for our family's dinner.

 

If you've never had faux-tatoes or think you don't like cauliflower (I personally LOVE it!) then I encourage you to try it.  Some restaurants are now carrying this "healthier" version of mashed (whipped) potatoes.

 

Ingredients

 

1 head Cauliflower, cleaned and cored - leave the rest of the head whole

1/2 Cup Butter

1/4 Cup Cream (I use Half & Half)

Salt and Pepper to taste 

Water

Parmesan Cheese as a garnish, if desired.

 

Instructions

 

1. Boil or microwave the whole head of cauliflower until very tender.

2. Drain the cauliflower and allow to cool to room temperature.

3. Cut into manageable pieces and puree in a food processor.  **I used our smoothie maker**

4. Add butter and cream and continue to puree until blended.

5.  Season with salt and pepper. 

6.  Add parmesan cheese as a garnish before serving, if desired.

 

Makes 4 servings. YUM!
