Due to vacation plans, I wont need to plan for Friday and Saturday. After vacation, I really want to start "cooking" healthy again!

Sometimes It's the Little Things - a testimony of God's Provision

Like a faithful Father, God is always looking at the little details in my life!

Last night, I was having my ice cream craving after all, I hadnt had any ice cream since Monday. ;)
So after the children were in bed, Nathanael and I hopped in the van to go to the store. I prayed that God would show me which store to go to. I got behind someone who was driving like they didnt know where they were going, so I prayed "Lord, please show me which store has Breyers for the lowest price, if I am to go to Giant, please have this car turn right, if I am to go to Redner's please have it go straight" So the car went straight and I went right to Redner's. There they had Breyers 2/$5 wahoo....but wait, no mint chocolate chip (my favorite). :( Well, Turkey Hill's Philadelphia Style is just as good lets see how much it costs......it also was 2/$5....Thank you Jesus. Now He know I didn't NEED the ice cream, just wanted it, but he blessed my desires anyway.

I have always told people that children dont cost as much as you think, if God provides you with a baby he also provides for the care of it. I rarely have to buy clothes for my children (and I have five). When my youngest turned 3, I gave away 9/10's of my baby stuff and clothes sized 0-2T. So when I found out I was pregnant with Nathanael, I realized I didnt have much. I knew my sister still had her crib, so I could count on that. At my shower all the big money items were purchased (as well as some of the little items, plus gift cards for what I needed). Nathanael is just starting to outgrow his 0-3 months clothes, and only has a few outfits in the 3/6 month size. My husband got a job clearing out an apartment from a fire. The stuff on the floor was in great shape, but from a couple of feet up it was really bad. He brought home bins of clothes (looks like they were in storage) and in them were baby boy clothes sized 0-2T. I wasnt even starting to be concerned about what the baby needed clothes wise and God has provided for the next two years (plus I will be saving clothes from my older boys now too for Nathanael).

Swiss Chicken Casserole

6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted

Lightly grease crockpot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix.

Cook on low 8 to 10 hours or high 4 to 6 hours.Serves 6.

There are several contests going on so I would thought I would cover them in one post.

(I hope I win ;) ) 2) My daughter Emily is having a drawing in which she is giving away a copy of the "Boxcar Children: Blue Bay Mystery". She has two copies so she is giving one away. Slow Cook Thursday

Slow Cooked Short Ribs

2/3 cups all purpose flour

2 tsp salt

½ tsp pepper

4 lbs boneless beef short ribs

1/3 cup butter

1 large onion, chopped

1 ½ cups beef broth

3/4 cups cider o red wine vinegar

½ cup chili sauce

1/3 cup ketchup

½ cup Worcestershire Sauce

5 garlic cloves, minced

1 ½ tsp chili power


In a large resealable plastic bag, combine the flour, salt and pepper. Add ribs in batches and shake to coat.
In a large skillet, brown ribs in butter. Transfer to a 5 quart slow cooker. In the same skillet combine the remaining ingredients. Cook and stir until mixture comes to a boil; pour over ribs (slow cooker will be full). Cover and cook on low for 9-10 hours or until meat is tender.***I have found mine to take less time as soon as 6 hours.

Yield: 12-15 servings. Serve with rice and a salad!

When I plan my menu's I usually just plan 7 meals for the week because I have found when I assign them days, it usually doesn't work out....so with having meal plans for the week at least I have an idea whats for dinner and can play it by ear what is going to work for that day.....So here are my 7 meals.

Hamburgers, Corn on the Cob
Spaghetti, Salad & Garlic Bread
Chicken Fajitas
Pancakes, Eggs & Bacon
Chicken, Broccoli & Rice
