One the of things I like to make the most is Banana muffins.
We found this vegan recipe on the internet and have adapted it.
1c. sugar
1/2 c.margarine
3 bananas mashed.
2 c.flour
1/2 tsp baking soda
1/4 c soy milk
1 tsp. lemon juice
1 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. all spice
1/2 tsp. salt
1/2 c. chopped nuts
One night I put in all the ingredients and didn't get it mixed well enough before
I put it in the fridge so  I  could  go to bed.
In the morning I mixed it and put it in the oven.
It was a little clumpy but it turned out ok.
