Meet The Blogger:

Hello there! Thanks for stopping by. I am pleased to have you here at Rachel's Reasoning. This is a place where I post my homesteading adventures in our family of 10. We garden, raise goats, chickens and dogs. I am hoping for some ducks and turkeys in the spring, but not sure if I am going to get them. Check my other sidebar for a list of our homestead animals.

Clam Chowder Soup - Mm Mm Good!

Posted in My Recipe Box!

Amanda and Jocelyn make the best Clam Chowder Soup ever! It's not something we have every week, but we have been having it more often. It's one of my favourite soups. Try it yourself and see how you like it. I'm sure you will love it!

Clam Chowder

3 slices turkey bacon, diced
1 cup chopped onion
3 cups diced potatoes
1 bottle (8 ounces) clam juice
1 teaspoon salt
1/4 teaspoon pepper
2 cans (approximately 7 ounces each) minced clams
3 tablespoons flour
2 cups half-and-half
1 cup milk
They did not use any clam juice. I used just the cans of clams and then rinsed out the cans with water. It was plenty clammy too!

Prep and Cook:
Cook bacon until crisp in a Dutch oven or large, heavy saucpan. Remove bacon to paper towels with slotted spoon; drain. Add onion to bacon drippings; sauté until softened. Add potatoes and clam juice, salt, and pepper. Cover and simmer for about 15 minutes, or until potatoes are tender. Remove from heat.
Add minced clams with their liquid. Whisk flour into milk; add to chowder with half-and-half. Cook over medium heat, stirring constantly, until clam chowder thickens and bubbles, or about 3 minutes.
Clam chowder recipe serves 4.
Hope you enjoy the recipe and let know if you try it.

Sunday, November 30, 2008 - Your comments for me

Hi, Rachel! Thanks for stopping by my blog! I got the barn pic from photobucket; I finally had to get an account there ;-) Then Jocelyn "fixed" it for me, as it was way too big; then Amanda fixed my margins on my sidebar! What would I do without you all?! I know I'd be very lonely around here ;-)

I think I would like the clam chowder, but I don't know about everyone else. I am putting some soup and sandwich meals on the menu now. We had a good Thanksgiving - Matt's family on Thursday and mine on Saturday. I got to play Scrabble (and won)! The kids had fun, too!

Blessings,
Danielle
