My Recipe Box - Banana Bread

Here's the recipe I use to make some good old homemade banana bread. It's great to use those old bananas that are sitting there not getting eaten. I won't eat mushy bananas, but with this recipe, you can savour every taste of them!

Banana Bread
1 cup of sugar
1/3 cup butter
2 eggs
1 1/2 cups of bananas, mashed (3-4 four ripe)
1/3 cup of water
1 2/3 cups of flour (I usually use whole wheat flour to make this kind of stuff)
1 tsp. baking powder
1/2 cup finely chopped nuts

Heat the oven to 350*. Grease bottom only of loaf pan, 8 1/2x2 1/2  or 9x5x3 inches. Mix sugar and butter in a 2 quart bowl. Stir in the eggs until well blended. Add bananas and water; beat for about 30 seconds. Stir in remaining ingredients except nuts just until moistened; stir in nuts. Pour into pan. Bake it until you stick a cake tester in it and it comes out clean. Stick it in the middle. 8 inch loaf pan bake for an hour and 15 minutes, 9 inch loaf bake for one hour. Loosen sides of loaf pan; remove from the pan. Cool completely before slicing or it will fall apart. :)

I love making a few loaves and then sticking them in the freezer. Frozen banana bread is  great treat here. Everyone loves it.

Baking still,
   Rachel

Thanks for the birthday comment. aren't you Jocelyn's sister? I think you are. I deleted most of my friends. I am now making friends whose age is near mine or I can relate too.

Smiles,
Alli

P.S. Check out my mom's blog and my friend's blog. Their blog site is under my links.

We don't really have a farm but we have like 15-20 chickens. We love chickens. And we live on a hill.

Banana bread sounds really good right now.
Maybe on the way back from our trip we will get to stop by your house.

Hmm, I don't think I have ever had frozen banana bread.
But I have had it very very cold.
No, you know what? I have had it frozen.
We were going on a trip a long time ago.
Mom had made it for breakfast.
I think it tastes ok frozen, but I think it tastes better just cold.
Yes, I love nuts in my banana bread.
Love you!

P.S. I don't think your dream will come true because we are over here in AZ and it takes a long time to get there.
I wish it came true.

Yeah, I'm NUTS because I don't like banana bread frozen. LOL!

Yes, hope we will get to stop by for a couple days!
Sani is getting better.

What are you guys eating tonight? Or, since you are a couple hours ahead of me, what DID you eat for dinner?
Love you!
