Crockpot Morning Casserole

Crock Pot Morning Casserole


1 bag (32 oz.) frozen hash brown potatoes

1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed

1 medium diced onion

1 green bell pepper diced

1 1/2 C. shredded cheddar or Monterey Jack cheese

1 dozen eggs

1 C. milk

1 t. salt

1 t. pepper (more or less to taste)

Place a layer of frozen potatoes on the bottom of the slow cooker,
followed by a layer of bacon then onions, green pepper and cheese.
Repeat the layering process two or three more times, ending with a
layer of cheese.

Beat the eggs, milk and salt and pepper together. Pour over everything else.
Cook


Instant Oatmeal

Yep, you guessed it. It is another recipe from Crystal! She has quite a brood of children herself and you can tell they are fed well. I love her recipes!!!!

Instant Oatmeal Mix
20 cups of quick cooking oats
2 cups of powdered milk
1 T. cinnamon
1 T. salt

Take about half of the oats and run them through a blender or food processor to make them smaller…..YOU DON’T WANT FLOUR THOUGH!!!!
Then mix with the rest of the ingredients.  I put this in a gallon size jar for storage. For serving we do not really measure this.  WE scoop out some of the mixture and put it in a bowl.  Cover it with boiling water and let it sit for a minute or so.  Then mix it with honey, maple syrup, dried fruit, milk or anything you normally would enjoy with oatmeal.

I got this recipe from the wonderful homesteading chat group the Crystal from www.thefamilyhomestead.com hosts. A gal named Penny posted it. I make it often for my husband that works graveyard shift.
He comes home about 6 am and it is nice to have a warm breakfast waiting for him that I slept through the cooking process for!!!!!

Penny’s Crockpot Oatmeal

2 cups of milk
¼ cup brown sugar
1 Tbsp of melted butter
¼ tsp salt
½ tsp cinnamon
1 cup quick cooking oats
1 cup chopped apple
½ cup raisins
½ cup of chopped walnuts

Grease the inside of the crockpot.  Put ingredients inside the crockpot and mix with a wire whisk.  Cover just before you go to bed and turn on low. It will be reading in the morning.



Big Batch Buttermilk Biscuits

BIG BATCH BUTTERMILK BISCUITS

6 cups of flour ( can do part whole wheat)
1 cup shortening ( can use butter)
2 tbsp. Baking powder
2 tbsp sugar
1 tsp soda
2 tsp salt

Cut shortening into dry ingredients.  Add  2 ¼ cups of cold buttermilk. Stir until moistened.  Dump onto a floured board and knead about 4-5 times.  Cut with a 2 ½ inch cutter.  Brush with melted butter and bake for 15-17 min at 450*. Makes about 3 dozen biscuits.
Can freeze before cooking stage.


Homeade Grapenuts

Home made Grapenuts

3 ½ c. whole wheat flour
¾ cup to 1 c. sucanut or honey
2 cups milk mixed with 2 T. vinegar
2/3 t. salt
1 t. baking soda

Beat in order until smooth.  Spread onto a cookie sheet sprayed with Pam.  Bake for 15 min. at 375.  When cool, grind in a food processor.  Then return back to sheet for about an hour in the oven, turning every 15 min, or so until crisp but not to burnt.  Note that it is a lot like baking granola after you have processed it and return it to the oven so keep an eye on it.

I make this double or triple batch to have enough. This alone will take 2 baking sheets so be prepared if you double or triple it!!!
Great to make on a cold day!!!!!



German Pancakes

MY KIDS ABSOLUTELY LOVE THESE!!!
This works out great when the chickens are producing so many eggs that we cant keep up with them too!
We serve this with syrup, fruit, butter or honey.

German Pancakes

6 eggs
1 cup milk
1 cup flour
½ t. salt
1-2T. Butter, melted

Put all these ingredients in a blender and process until smooth.
Pour into a greased 13 X 9 casserole dish.
(It seems to work best if you stay with this size!)
Bake uncovered 400* for 20 min. This is yum! I love the store bought kind, so this is even better.
I dont remember and didnt write down where I got this recipe. So if you are reading it and I got it from you, PLEASE let me know. I want to give credit, where credit is due!!!!

Large Granola Recipe

arge Granola Recipe

12 cups uncooked oats
1 cup shredded coconut
1 cup whole wheat pastry flour
½ cup powdered milk
1 T. cinnamon
1 ½ t. salt
1 cup light olive oil
1 1/3 cup of honey
1 T. vanilla
2 cup raisins
2 cups of nuts of your choice, chopped

You will need a very large bowl for mixing. Combine the oats, coconut, flour, powdered milk, cinnamon and salt well in the large bowl and mix well.  In a saucepan heat the oil, honey and vanilla until just warm.  This helps the mixture pour easily.  Pour this over the oat mixture and stir well.
I start out by stirring it with a large spoon, but end up mixing it with my hands to insure that everything is evenly mixed.  Spread this in a thin layer on  2-3 large cookie sheets and bake in the oven at 300 for 45-50 min.  You will need to stir it about every 15 min.  I bake two trays at a time and switch the position of the trays each time I stir so that the granola browns evenly.  When the mixture is done you can pour it back into the large pan and let it cool.  When completely cool, stir in the raisins and nuts.  You can store the finished granola in an air tight container or even in a couple large Ziploc type bags.   This recipe will make approx. 20 cups of granola.
