Graham Crackers

This recipe for graham crackers comes from www.thefamilyhomestead.com . Crystal  is like my HERO!!!! I have gotten many recipes from soup to laundry soap!!! She is great! You will see me giving credit to her for many of our common recipes.

Yummy Graham Crackers!

 

1/3 cup of olive oil

1/3 cup of honey

¼ cup of milk

2 T. molasses

1 t. vanilla

2 ½ to 3 cups of whole wheat pastry flour

1 t. baking powder

½ t. baking soda

¼ t. salt

1 t. cinnamon

 

In a large mixing bowl using a wire whisk, mix and combine oil, milk, honey, molasses, and vanilla.  In a smaller bowl, combine 2 ½ cups  of flour, baking powder, soda, salt, cinnamon. Add this to the liquid mixture.  At some point you will want to switch the wire whip to a large mixing spoon. Add the extra ½ cup of flour if your dough is sticky.  A little sticky is ok.  By the time you finish adding the extra flour you will be doing the mixing with your hands.

 

Preheat the oven to 300*.  While the oven is heating up, divide dough in half.  Spray a large cookie sheet with non-stick spray.  Now roll out one of the dough halves onto the cookie sheet.  A cookie sheet without sides is the easiest.

Using a pizza cutter, cut dough into squares and poke with fork. Bake for about 20 to 25 min. Let cool on sheet and separate and carefully remove them.

 

 



Pumpkin Bread

Pumpkin Bread

 

4 cups of sugar

3 cup pumpkin

1 cup of Wesson oil or 1 cup of applesauce

2 tsp of cinnamon

1 tsp of cloves

1 cup of chopped nuts (opt)

1 cup of raisons, dates (opt) or chocolate chips

5 cups of flour

4 tsp of baking soda

¾ tsp of baking powder

 

Mix and cook at 350* for 40-60 min.

Makes 3 loaves.




Whole Wheat Banana Bread

Whole Wheat Banana Bread

 

½ C. butter ( 1 stick)

1 C. sugar

2 eggs

1 C. mashed ripe banana (2-3 bananas)

1 t. vanilla

2 C. fresh ground flour

1 t. baking soda

½ C chopped walnuts (opt)

½ t. salt

 

Preheat oven to 350*. In large bowl cream butter and sugar.  Add the eggs, bananas and vanilla, beat well.  In a separate bowl, mix together the flour, baking soda and salt.

Stir in liquid ingredients into the dry ingredients. At this point add nuts if desired.  Pour this mixture into a greased 9 x 5 inch loaf pan and bake for 60 min.  Let cool in pan for 10 min and then take out and let cool on a wire rack.

Whole Wheat French Bread

This is a recipe I have used often. I generally do a double batch or so, because of the work involved.  It freezes very well!!!

 

WHOLE WHEAT FRENCH BREAD

 

1 tablespoon of yeast

1 ½ cups of warm water

1 ½ teaspoons of salt

3 tablespoons of olive oil or canola oil

2 cups of whole wheat flour

2 cups of white flour

 

1.      Dissolve yeast in water, I add a pinch of sugar, and let it rest about 5 min or until it begins to foam.

2.     Stir in salt, oil, and half or flour

3.     Gradually add remaining flour, mixing well.

4.     Knead 8-10 min. or until smooth and elastic.

5.    Place in greased bowl, and let rise until double (1/2-1 hour)

Punch down and let rise again until double.

6.    Punch down and divide into 1-4 pieces, depending on the size  

Of the loaves desired.

7.    Roll into oblong shape and then roll up, starting on long side; 

Pinch to seal, forming long thin loaves.

8.    Place on greased cookie sheet.

9.    Slash top of dough with knife 3-5 times diagonally down

Each loaf. 

10.Brush with water and let raise till double again!! (about 1 hr)

11.Bake at 375* for 30 min.

12.Use within one day or double wrap and freeze

 

12 servings 2 loaves 3 ½ hours prep

 



Basic Sweet Bread Recipe

I use this recipe for many different things. I make white rolls, cinnamon rolls, and have put them around sausages for pigs in a blanket.
Not the best recipe for you, but it does taste great once in awhile!!!!

BASIC SWEET BREAD RECIPE

 

6 cups of white flour

2 teaspoons of salt

2 teaspoons of yeast

½ cup of shortening

½ cup of sugar

2 eggs

2 ½  cups of warm water

 

Combine dry ingredients. Stir in water, shortening, and eggs.

Rise to double.

Bake 350*



Best Whole Wheat Bread EVER

I have been using this recipe for a little over a year now. I like it for many reasons. I can keep all these items in my pantry, and it is cheap. You dont need milk or eggs, so you can always have what you need on hand. I buy my lecithin and gluten flour, and vitamin C powder in bulk so I always have it on hand. We have experimented with many different flours. WE always grind our flour right before we make the bread. We use the hard white wheat for the best results. We have made it with half hard white and half hard red and it is ok also. So credit goes where it belongs, I got this recipe from Gail Knickerbocker. She is a wonderful lady with 11 children and a zest for life and knowledge to spare!!!!

Best Whole Wheat Bread EVER

 

4 cups of warm water

2 ½ T of instant yeast

¼ tsp vitamin C powder

1 T lecithin

3 T Gluten Flour

½ cup of oil

½ cup of sugar, honey, sucanat, or agave syrup

4 tsp salt

Whole wheat flour

 

 

In mixer put 4 cups of flour and all the rest of the ingredients. Mix. Let sit for 10 min or more to SPONGE. Mix in more flour until it pulls away from the bowl and shape into pans.

Let rise for 30 min.

Bake 359* for 30 min.
