What a neat idea I found here: http://pokeberrykitchen.blogspot.com/2008/02/coupon-sorting-mat.html .  When I have finished clipping my coupons, I sort them into piles according to how I'm going to organize them.  This coupon mat can be made easily, and stored with your coupons.  Take a look at the link above for a picture and ideas on making your own.
