8 Pints, 12 Bars & Leftovers

I feel like my first work day after the time change was very productive!  We've been out of jelly for a month or more, and I've got juice in the freezer from Sand Plums, Grapes & Peaches, so there's no excuse not to have any jelly.  So, I thawed out some sand plum juice and made 2 batches of Sand Plum Jelly, yummy!!  I had a couple pieces of toast so I could try it out... it passed.

Then, I made a batch of Lavender Mint Soap.  I was going to make Country Lavender, because I'm running low on that kind, but it's getting close to Christmas, so I added some peppermint and spearmint essential oils to make it a little Christmasy.  It smells wonderful!

Ladies, I have a question.  What do you do about leftovers?  Here's my dilemma - I prepare nice dinners throughout the week, then on an extremely busy day, like today was, I will heat up all of the leftovers and that will be our dinner for the night.  Now, the reason I'm asking about this is because my husband just seems so put out when I serve leftovers (which happens once every week or two).  Last night, instead of eating the leftovers, which consisted of Meatloaf topped with Mashed Potatoes & Cheese; Beef Stroganoff made with real Roast; and Spaghetti - my husband ordered 2 pizzas from our local gas station/pizza place.  I just hate to throw leftovers out, and I don't eat meat, so I won't eat them (I do however, eat my leftover meals which have no meat {no it's not religious or animal rights, I just don't care for meat}).  What would you do in this situation?  Throw all leftovers out / Heat them up and serve them anyway / or what?  I need advice.

I try to hide my leftovers. I know that sounds funny. But instead of just reheating them at the end of he week, I try to find meals to make that uses the leftovers in them.No one knows there are leftovers in the meal that way. Soups and stews are great for this. So are casseroles. It is amazing what tastes good mixed together. Taco meat and chicken do go together!

This won't be much help to you, but I have recently really made an effort to use up leftovers. Used to be that most got thrown out........sad even though the dogs loved it. Hubby doesn't like them very often either, so I fix him something he likes, he can eat breakfast meals 3 times a day, and I make myself eat the leftovers. Not always just what I want to eat, but I feel so much better using them up.
