Sunny Monday

Good Morning, it looks to be a wonderful day here in the Midwest today and I can’t wait for it to warm up a bit and get outside, we had storms move through our area over Saturday night and Sunday morning and I have quiet a mess out there to clean up. I will keep all those in the south in my thoughts and prayers today as the clean up begins for those in the path of the very severe weather over the weekend, the news coverage showed a wide are if destroyed homes and the loss of life was high as well.

The hens have been very busy laying more eggs than we can use and that I have orders for this week, so I am looking for some new recipes using lots of eggs if anyone has any suggestions please feel free to leave me a comment, I hate anything going to waste. I think we will be having omelets for supper this evening so I can use some of them up. If nothing else I can always freeze them for use later on in baking.

My hens are laying like crazy too. Have you ever tried pickled eggs, ummm good. I make them by the gallon jar full. You can find lots of recipes on the net if your interested in that........Kitty
