Earth Day Tuesday

I know everyone has a lot on our plates right now, high gas prices, high food prices and just getting form one day to the next takes a lot of energy some days. But, I think it is important to stop and take a few moments to celebrate Earth Day. We tend to take out planet for granted and this planet is in trouble with all of the problems caused by global warming, pollution and the general wear and tear that our daily lives have caused. So please take a few moments today to stoop and think how you can help reduce your carbon footprint on earth. Here are a few excellent inks to some sites that have a vast wealth of information.

It promises to be another beautiful day here in the Midwest with a few stray rain showers this afternoon. I plan to spend the day out working in the flower beds and herb garden adding some annuals in with the perennials and I have some new herbs to add to the herb bed. I noticed yesterday my garden is springing to life and the seeds were poking their heads up from the soil, there is nothing quite to satisfying as seeing all your hard work come to fruition; before you know it we all be in the middle of canning season!

 

Here is what is cooking for breakfast this morning, enjoy!

 

Whole Grain Blueberry Waffles
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup quick-cooking oats
3 teaspoons baking powder
1 tablespoon sugar
1 1/2 cups fat-free (skim) milk
2 tablespoons vegetable oil
1 egg
1 cup frozen blueberries, thawed, drained

1. Lightly spray waffle iron with cooking spray; heat waffle iron. In large bowl, stir together flours, oats, baking powder and sugar. In small bowl, stir together milk, oil and egg. Stir into dry ingredients in large bowl, stirring just until large lumps disappear. Gently stir in blueberries.
2. Pour slightly less than 1 cup batter onto center of hot waffle iron, spreading batter to edges. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
3. Bake 3 to 5 minutes or until waffle is golden brown. Carefully remove waffle. Serve immediately. Repeat with remaining batter.
