Yes thank goodness it is Friday at last. This past week has been along one and I am ready for the weekend and a little down time.
I went out to do the milking this morning at 4 a.m. as usual and I could not figure out for the life of me what was going on, the animals were all in an uproar and no matter what I tried I could not settle them down. I looked around the barn for predators but nothing was found. I finally got Jess (the cow) to settle down so I could start milking her and then I felt the ground shake. At first I thought it was thunder but it continued for quite a bit. The goats were having a fit and Jess was just about to knock me and the bucket over. I finally finished the milking how I am not sure and came into the house and turned on the news, well no wonder the critters were all upset this morning we had an earthquake here in the Midwest this morning! I know to some that is not a big deal but here in the Midwest we don't experience them that often. I guess that way one way to get the day off to an unusual start!
Another busy day is ahead for me, I have some shopping to do in town and a doctors appointment this afternoon. I hope everyone has a wonderful day and enjoy the weekend.
Here is another favorite recipe that I make quite often especially when my daughter is home; it is one of her favorites. This is a simple recipe but one we all look forward to;
Buttermilk Blueberry Pancakes
2 cups all-purpose flour
1/4 cup sugar
21/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/4 cup melted unsalted butter, plus some for frying
1 cup blueberries, fresh or frozen
In a large bowl sift together the flour, sugar, baking powder, baking soda, and salt.
Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix, see Cook's Note*.
Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.
Serve with a dollop of whipped cream and maple syrup.
