I am married to a wonderful man and have 2 boys.I love to cook,Play with our boys & Play on the computer when I can.I garden for fun don't get to much out of it.I love spedning time with family every chance I get.

Menu for the next 2 weeks

My menu goes from Monday-Sunday.This menu is for the next two weeks.In no certain order.

--Beefy Vegetable Soup(new recipe) with brown n' serve rolls on the side.

--Whole baked Chicken with Homemade mashed potatoes,Corn and Homemade Chicken gravy on the side.

--Crockpot Tortellini(new recipe) with Garlic Bread and Green Beans on the side.

--Bacon Burgers with Angeled eggs and veggie tray(Sliced cukes and carrot rounds) on the side.

--Tator Tot Casserole with frozen califlower and broccoli,Corn and brown n' serve rolls on the side.

--Stuffed Shells(new recipe) with Garlic bread,Frozen peas and lettuce with dressing on the side.

--Pork Roast in the Crockpot with mashed potatoes and gravy on the side.

--Steak with Baked Potatoes and Salad on the side.

--Hot dogs with Fries and Chili beans on the side.

--Loaded Baked Potato Soup(new recipe) and Sinful bread(new recipe) on the side.

--Taco Salad.

--Whole baked ham with mashed Potatoes and veggie.

I will do a couple left over meals with the ham also.

Tuesday

Dh & I went and cleaned our 2 apartment jobs.Stopped at the grocery store to get the few things I needed for my menu I made up last night.Then stopped at Wendy's drive through and grabbed a sandwich and fries off the dollar menu and brought it home to eat.Dh then went on to do some work.I didn't get to much done while the boys were at school this afternoon.I was talking to my sister Karen.When the boys got home from school we went over to Hirrams to order Dakota some cold wave snow pants.I went to get gas and could not figure out how to get the locking gas cap off again.That is so aggervating.So I went to where Rick was and he took it off so I could get gas.It upsets me to begin with that I have to have a locking cap cuz people steal gas?And do bad things to other peoples vehicles.And now I have to suffer by learning how to work this new gas cap???So not right!!!When we got home I went across the street and sat and visited with Bob and Coleen my really nice neighbors.Then came home and made dinner and now playing on the computer.Oh I did get a load of laundry done also.

Dinner was spaghetti with homemade meatballs,plain garlic bread and feta,spinach ficacha bread(Sp?).The bread was amazinly good!I hope to find a recipe to make it myself soon.

2 week menu

I am going to go ahead and do 12 meals since sometimes I have a taste for something I find in the freezer.

--Whole baked chicken,boiled potatoes,wax beans,corn,chicken gravy**Made this tonight.

--Spaghetti with Homemade meatballs,Garlic bread.

--Turkey noodle soup,Homemade bread on the side.

--Hard/Soft shell tacos with chili beans and spanish rice on the side.

--Cheese burgers with fries and carrots sticks on the side.

--Turkey broccoli casserole with salad on the side.

--Stove top meatloaf muffins with mashed potatoes and green beans on the side.

--Split pea soup n kielbasa soup with brown n serve crusty rolls on the side.

--Tator tot casserole,Califlower and broccoli and corn on the side.

--Asian chicken and noodles with egg drop soup on the side.

--Tuna salad on toast with lettuce with sliced cukes and tomatoes on the side.

--Beef stew and homemade bread on the side to dip it in yum!

Shrimp with Key Lime Cocktail Sauce (WW)

Shrimp with Key Lime Cocktail Sauce

Points: 3

Servings: 4

1 pound shrimp,medium peeled and devined

1/2 cup ketchup

2 T. lime juice

2 tsp. worcestershire sauce

1/2 tsp. hot pepper sauce

Rinse Shrimp and drain and put in fridge(I buy the already cooked kind).

Make sauce with ketchup,lime juice,Worcestershire sauce and hot sauce.

Fiesta Ranch Dressing (WW)

Fiesta Ranch Dressing-

1 (.59 oz.) envelope hidden valley fat free ranch dip mix

1 1/2 T. Hidden valley fiesta ranch dip mix

1 (16 oz.) container fat free sour cream

1 cup low fat buttermilk

Mix buttermilk,ranch dip and fiesta ranch dip mix together.Add sour cream and chill 1 hour.

Serves: 12 (1/4 cup each) 1 WW point per serving.

Quick and Easy Potato Soup(WW)

Quick and Easy Potato Soup-

1 (28 ounce) bag frozen ore ida potatoes O'Brien with onions and peppers

4 (14.5) cans fat free chicken broth

1 (2.75) package pioneer brand country gravy mix

Spray a 6 quart pot with nonstick cooking spray.Saute' potatoes over medioum high heat for 10 minutes.Stirring gently until thawed.Add broth,turn heat to high and bring to boil.Prepare gravy mix according to package directions.Add to potatoes and broth.Cover and simmer 20-30 minutes.

Serves: 6 (2 cups each)

WW: 3 per serving.

Monday

Rick & I went to lunch with my best friend Lynda and her husband Bill.We went to:

We had the all you can eat soup/salad/bread sticks.So good!It was dh's first time being there.I had:

Chicken Ganocchi soup

And Zuppa Toscana

Peach Bellini Tea that I love!

And split desset with my best friend Lynda.She picked Black Tie Mousse Cake:

Doesn't it all look great?

We then went on to Menards to get new knobs for the bathroom.This morning we had a hard time turning the hot water off the knobs kept on spinning.So we got those got them put on and didn't work.Not the problem.Hopefully we can return them tomorrow.So we went back and Dh got a whole new faucet with knobs.Another $40 there.Yikes!So I am hoping the knobs can be returned to bring it down to $30!I did a load of laundry and it is in the dryer right now.Ryan went snowboarding with some friend after I cut his hair for an hour or so.His hair was so long it was a mess!Now it is time to relax and kick back a bit before bed time.No diet for me today but will be back on board tomorrow!

Saturday and what we did

I got up and got the boys showered while Rick went out and snow blowed. We got so much snow!While he was out side I gave Ryan a couple bowls of chocolate lucky charms,Dakota had a can of veggie soup and homemade bread,Rick & I had Chicken fiesta soup when he came in.I did a couple loads of laundry.Dakota vacuumed the livingroom for me.I also finally got the long cords on the 2 sets of blinds in the kicthen trimed back so they were not hanging all over everything.Looks so much nicer.I did lots of dishes as I durtied them.I made a pot of chili to put in bowl for the freezer.Dakota loves chili and Rick isn't a real big fan of it so I freeze it and he can have it any time he wants to.I made meatloaf muffins for dinner,Whole steamed carrots,green beans,garlic bread using up the rest of the left over homemade bread and apple sauce for dinner.It was really good.Rick cleaned up the kitchen after dinner.How nice of him.We went and rented some movies today so now I am going to get off here and go watch some movies.Have a good evening everyone.

Chicken Fiesta Soup (WW)

We all liked this one too.

Chicken Fiesta Soup

1 can fat free refried beans(16 oz.)

1 can reduced fat chicken broth(14.5 oz.)

1 can of corn (14 oz.)

1 cup salsa

1 can or white meat chicken OR skinless chicken breast, 5 oz.

Place everything in a medium sauce pan(I did it in a glass dish for the microwave).Drain corn if desired but not necessary.Heat it up and eat it up.

1 point per cup.

I used left over Turkey I had portioned into baggies and put in the freezer.

Stove Top Meatloaf Muffins-WW

I made these for dinner and they were so good.Best thing is that you can eat 2 of them and it is only 4 points.

Stove Top Meatloaf Muffins Recipe

1 pound of lean ground beef

1 box of stove top stuffing mix(I used Chicken Flavored)

1 cup water

2 egg whites

1 medium onion, diced(I used half an onion diced fine)

1 medium green bell pepper, diced(I used a jar of red pimento's with liquid also)

Mix together and divide into 12 muffin cups that have been sprayed with non stick cooking spray.Bake at 350 degrees for 35-40 minutes.Serve with Ketchup on top.Add points for the ketchup(I did not use anything on ours).

Serves 12

WW points= 2 each

The whole family liked these so they are a keeper!!!

2 Point WW Shake

2 Point WW Shake-It was so good!

1 cup Skin Milk

2 T FF,SF pudding mix any flavor(I used vanilla)

1 T cool whip

1 t. Vanilla

8 ice cubes

Add to blender and mix until mixed well.

Serves 1

Went thrift Shopping today.

What I was wanting is a exercise bike.But we had no luck finidng one.I will continue to look though.

I got an exersice ball for $4.99 to do sit ups.

I got a black and brown tiger print fleece blanket for the livingroom for $1.99

A chair to go with the make up vanity I bought a couple weeks ago.I will take pictures of the desk and post it later.

I plan on getting a slip cover for it and padding in time.

2 candle holders that are white with designs.Small one for $1.00 and the large one for $1.50

We are thinking about using them on the vanity I got and use one for my hair ties and one for dh stuff.

.99 The Best of Pat Travers CD but when we got home there was no CD in there.Sigh how rude!So gotta take this back next week and get our money back.

A little dipper Crockpot for me to keep our Dips in.I will be using it tonight to keep our Artichoke/Spinach dip in. $4.99.

Total spent $22.75.I think I did great.

We went to this other store that some one told us just opened and found 3 things there.

I got me a pair of pajama bottoms

I only got the bottoms and they look just like these.

Blue hooded sweat shirt for Ryan.

An ambercrombe green sweat shirt for Ryan

Got it all for $5.83.

I am pretty happy with my finds today!

WW shepards Pie

This is so good and the best thing you can eat the whole portion.I know some might miss the mashed potatoes on top and the gravy but it was good with out it.

1/2 c. veggie meat= 1

1/4 c. diced onion= 0

1/2 c. diced can tomatoes= 0

1 c. frozen mixed vegetables= 0

1 large or 1 c. whole potato baked or nuked- 3

1/4 c. ff cheddar cheese= 1

Total= 5 points for the whole serving.And we eat the whole serving!

In non stick skillet heat up veggie meat,onion,diced tomatoes,mixed veggies.Cook on low until the onion is getting soft.Add into a 8x8 glass baking dish and spread it out in the glass dish.Take the skin off the hot potato and dice it up and add on top.Then top it with the cheese.Bake at 400 for 15-20 minutes.Until bubbling hot.Let cool and eat.If we split it I serve it with green beans or some kind of 0 point veggie.If not I just eat that and dh has a whole can of green beans or wax beans heated up with it with pepper and a couple sprays of 0 calorie butter spray.
