I live in PA with my wonderful husband and kids, and I want more than anything to be a homesteader...

Today was grocery shopping day!!  I did spend  little over $60, but $20 of that was a movie that I had been saving my birthday money for from last month!!  I got The Chronicles of Narnia movie, and it was GOOD.  I loved it!  I also got 2 loaves of bread, some Pringles snack stacks, a sample-sized bottle of Head and Shoulders, 2 bags of frozen corn, 2 meal replacement bars, 4 packs of yogurt, a head of lettuce, 2 pounds of butter, a box of frozen fish, a tomato, a bottle of liquid laundry detergent, 2 bottles of dish liquid, 3 gallons of milk, 3 jars of mayonnaise, a jar of applesauce, a big box of powdered laundry detergent, and a bottle of orange juice.  All of the groceries came to around $40.  Not too bad!!

Tonight for supper I made oven-fried chicken, mshed potatoes with gravy and cauliflower casserole.  It was soooooo good, and I am still stuffed!!

Cauliflower Casserole

1 large head cauliflower, broken into small florets

1/2 cup butter, melted

1/4 cup grated Parmesan cheese

2/3 cup Italian-seasoned bread crumbs

1 pinch salt

1 teaspoon crushed red pepper flakes

1 cup shredded cheddar cheese

Preheat oven to 350 degrees.  Bring a pot of water to a boil.  Add caulilower and cook for 10 minutes.  Drain and place in a 2-quart casserole dish.  In a small bowl, combine butter, parmesan cheese, bread crumbs, salt and red pepper flakes.  Sprinkle mixture over casserole and top with cheddar cheese.  Bake for 20 minutes, or until cheese is melted and bubbly.

I had purple and yellow cauliflower, so I used them both together.  I had bread crumbs that I made from stale bread, so I just added some Italian seasoning to them.  This turned out so good, and Dave and I both love it!!

Groceries

My son does his groceries each week just for himself and I read the dockets as I have to reimburse the money when I can. It is hard to visualise whether he has bought enough.

When do you go again, next week?

We bought the dvd yesterday as well and stayed up way too late watching it! Loved it though.

The casserole sounds wonderful. Thanks for posting the recipe.
