Wishful Homesteader

I live in PA with my wonderful husband and kids, and I want more than anything to be a homesteader...

I got $70 in rebates from Symantec for my Norton systemworks!!  I didn't pay it on my loan, though, because Dave will have to get his truck inspected soon.  So I put it in our checking account.  I did do 1 load of laundry, and just as I was about to take it out to the clothesline, it started raining.  So into the dryer it went.  I did pay on my loan today, and I was able to put $10 extra on it.  Better than no extra!!

We went to Dollar General today, and I got 2 of those new Venus razors for women, and my total was $0!!  No, that's not a typo.  They are $5, and I had coupons for $5 off!  I didn't even have to pay the tax on them!!

We also went to Wal-Mart today because Dave needed water filters (our water is nasty), and it POURED while we were in there.  We looked in the lawn and garden section, and Dave got a few things he needed.  He got some grass seed and a spreader.  We got some chicken leg quarters, too, for 42 cents a pound.  I would have gotten more if I had room in my freezers.  I try to get at least 1 bag every time we go in, because that is a great price!  I got some veggie seeds for 10 cents a pack.  I know they're probably not the best quality, but I didn't want to spend a lot to experiment with.  I got carrot seeds, and a few herb ones.  I can't remember what other kinds I got.  I never know what I'm doing, so 10 cents a pack is ok to play around with!  We were wandering around in there for a while because of the rain, and on the way to the car, Cameron and I had a blast jumping in puddles together.  We were laughing the whole time.  When we got in the car, he wanted to take his pants off, though, because the bottoms of them were soaked.  Then he said, "I want to go to the donut store!"  So we went to Dunkin' Donuts. They were both so good today.  Emily still has her black eye, so people kept staring at us.

The books I had ordered came today, but in the email they sent me, they weren't even supposed to ship until tomorrow!  That was a great surprise!

The kids had cereal for breakfast, and Dave and I hadn't eaten, so I made banana-cocoa cupcakes.  Yummy!!  For lunch I made French toast, and for supper we had hamburgers and French fries.

Banana-Cocoa Cupcakes

1/2 cup butter, softened

1 cup sugar

1 egg

1 1/2 cups flour

1 1/4 teaspoons baking soda

1/4 cup cocoa

1/2 teaspoon ground cinnamon

1 1/4 cups mashed ripe bananas (about 3)

Sifted powdered sugar

Cream butter; gradually add sugar, beating until light and fluffy.  Add egg, beating well.  Combine flour, soda, cocoa and cinnamon; add to creamed mixture alternately with bananas, beating well after each addition.  Spoon batter into paper-lined muffin pans filling half full.  Bake at 350 degrees for 20 minutes.  Sprinkle with powdered sugar.

I don't mess around with those paper baking cups unless they are free.  I sprayed the muffin tins with non-stick spray and the cupcakes came out fine.  These are always a big hit here!
