Strawberry Bread

I got a good deal on strawberries at work, but they're not as sweet as the local ones, so I made strawberry bread.  Yummy!  I just put it in the oven...

 

Strawberry Bread

3 beaten eggs

1 cup oil

1 1/2 cups sugar

1 teaspoon vanilla

2 cups mashed, undrained strawberries

3 cups flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped nuts

In a large mixing bowl, mix beaten eggs, oil, sugar, and vanilla.  Beat.  Add strawberries.  In separate bowl, sift together dry ingredients and gradually add to strawberry mixture.  Stir in nuts.  Pour in 2 greased loaf pans and bake for 1 hour at 325 degrees.

I used applesauce for most of the oil, and all I had was chunky applesauce.  It didn't seem to make a difference.  And I substituted whole wheat pastry flour for half of the flour.  I tasted the batter that was left inthe bowl, and I couldn't taste either of these changes.  I also omitted the nuts because I didn't have any on hand.  This bread is SO good.

I have been looking for a strawberry bread recipe since my sister was selling pre-made mixes (for a huge mark-up, in a home party type situation) and they had a to-die-for strawberry bread. But I refuse to pay large money for something I knew I could make myself. I cannot wait to try this!

oh - wait, now I need some strawberries! :):):)
