Macaroni Salad

My mom and I have been using this macaroni salad recipe for many years now, and I thought I'd share it with all of you. 

Macaroni Salad

2 cups uncooked macaroni

6 hard cooked eggs

1/3 cup grated carrots

1/3 cup chopped onion

1/3 cup celery

Cook macaroni per directions on package.  Combine all ingredients. 

Dressing:

1 1/3 cups sugar

1/4 cup flour

1/2 cup vinegar

1/4 cup prepared mustard

1 1/4 cups water

Salt and pepper

Cook until clear (about 10 minutes).  Cool.  When cool, add 1 1/2 cups mayonnaise.  Add a little celery seed, if desired.  Pour over macaroni mixture and mix well.  Sprinkle with paprika and let stand overnight in refrigerator.

I change it up a bit once in a while, like today I added lots more carrot, and a little less onion.  Well, the onion thing wasn't on purpose.  My onions were pretty small.  It's awesome, though, to be able to grab what you need right out of the garden in your backyard.  While I was out there, I grabbed some dill, parsley and chives, and chopped them up and threw them in as well.  If I have some leftover green pepper, I sometimes throw that in.  Olives would be ok, too, if you like them.
