My mom and I have been using this macaroni salad recipe for many years now, and I thought I'd share it with all of you. Macaroni Salad 2 cups uncooked macaroni 6 hard cooked eggs 1/3 cup grated carrots 1/3 cup chopped onion 1/3 cup celery Cook macaroni per directions on package. Combine all ingredients. Dressing: 1 1/3 cups sugar 1/4 cup flour 1/2 cup vinegar 1/4 cup prepared mustard 1 1/4 cups water Salt and pepper Cook until clear (about 10 minutes). Cool. When cool, add 1 1/2 cups mayonnaise. Add a little celery seed, if desired. Pour over macaroni mixture and mix well. Sprinkle with paprika and let stand overnight in refrigerator. I change it up a bit once in a while, like today I added lots more carrot, and a little less onion. Well, the onion thing wasn't on purpose. My onions were pretty small. |

It's awesome, though, to be able to grab what you need right out of the garden in your backyard. While I was out there, I grabbed some dill, parsley and chives, and chopped them up and threw them in as well. If I have some leftover green pepper, I sometimes throw that in. Olives would be ok, too, if you like them.
