an abundance of apples

My friend Steve (or Deebs as I like to call him) is the produce man where I work. He had 2 big bags of Cortland apples the other day that were getting soft, so he sold them to me for $1 a bag. I made an apple crisp and a pot of applesauce.
I got the recipe for the apple crisp from a Gooseberry Patch cookbook called Hometown Favorites. It was So good.
Aunt Maggie's Apple Crisp
4 c. apples, peeled, cored and diced
3/4 c. plus 1 T. all-purpose flour, divided
1/2 c. sugar
3/4 c. quick-cooking oats, uncooked
3/4 c. brown sugar, packed
1/4 t. baking soda
1/4 t. baking powder
1/8 t. salt
1/2 c. butter
Mix apples, 1 tablespoon flour, sugar and cinnamon together. Bake in an 8"x8" pan at 450 degrees for 15 minutes. Remove from oven and reduce heat to 350 degrees. Mix together remaining dry ingredients. Cut in butter with pastry blender until crumbly. Arrange topping on apples and bake for an additional 35 minutes. Serve warm. Makes 9 servings.

This is after they have cooked a bit. I left some of the peels on because that gives the applesauce a pink tint when I run it through the food mill. Emily thinks that is fun!

This is the finished product. I ran it through the food mil and added some sugar, cinnamon and nutmeg.

Yummy! I made apple sauce for the first time this year. It was a job. I may have to look into a food mill.Crispe ;o)
