Apple Pecan Pound Cake 2 cups Sugar 1 1/2 cup vegetable oil 3 large eggs 2 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 1/2 tsp. Vanilla 3 cups Granny Smith apples; peeled and finely diced 1 cup pecans, chopped Mix sugar and oil, add eggs and beat well. Combine flour, soda and salt. Add flour mixture to beaten egg mixture. Stir in vanilla, apples and pecans. Mix well. Spoon batter into a greased tube or Bundt pan. Bake at 325 degrees for 1 hour and 20 minutes. Allow cake to cool before removing from pan. Dust with confectioners' sugar or drizzle a glaze of confectioners' sugar and milk over the top of the cake. |
