Bread Recipe (Revised 6/25/08)
4-5 C Fresh Milled Flour
1 T Dry Yeast
2 C Warm Water
1 Egg
3 T Oil
3 T Honey
2 t Salt
Place 2 C of the Flour and the Yeast in bowl and mix. Add Water and mix for 1 minute. Allow dough to sponge 10 minutes.
Add Egg, Oil, Honey and Salt and mix...quickly adding 1 C of Flour at a time til soft dough forms. Knead 7 - 10 minutes. Preheat oven to 150* at this time.
Let dough rise in warm place (they recommend 150* oven)til doubled in bulk. Punch down.
Lightly oil your hands and shape dough / place in prepared pan(s). Return to Place in oven and allow to rise, watching closely. ( Set timer for 15-20 minutes so you remember to check it) When rise has completed, increase temp to 350* and bake for 30 minutes.
If you're like me, and like a sweeter bread...I add extra honey.
