The Start of a Homesteader Mom


5 more days. Anyone got ideas for dinners that pack well as leftovers?

Ok now I don't want anyone to worry about me. I have 5 more days of work and then I am a STAY AT HOME MOM! WOOHOO! But... I canceled my internet service at home in anticipation of moving. I was not going to sign on for another year and have a $99 cancelation fee. So we cancelled it and will get it back when we move. But that might not be until End of April beginning of May.  

 

I will however update my blogs once a week when I go visit my mother. But don't worry! I fully expect to be back - better than ever in May. And it is so worth it to be able to live out my dream of being a stay at home mom. So what I need everyone here to do is PRAY that all the pieces of the puzzle fit together and happen sooner than later.

 

I have to plan out a menu for next week because I will be shopping this week. If anyone has any good lunch ideas for a 3 year old and 1 year old who really WANT to live on junk food only but NEED to eat normal foods. I would love to hear them. I don't necessarily need things I have to cook either. I am just talking anything easy for my first week at home. I am going to take a stab at cooking dinners each night so that is about all the "cooking" I can handle the first week!

 

Also - anyones husbands pack lunches that do not have access to a microwave daily? Justin gets so tired of lunch meat. What dinners make leftovers that are suitable for packing in a cold lunch box? Ideas? I would love to hear some. Thanks!

Meat loaf sandwiches. Fried chicken. Chicken salad. Steak salad.
It's a little tougher without a microwave!
You can pack hot soup in a thermos, and it will stay hot for hours!

Anything you can do in a crockpot is a good thing, since kids usually get clingy and whiny right around the time you would need to cook dinner. Otherwise, anything that is not work-intensive. If you make pasta, set some of it aside and make it into a pasta salad. Instead of lunch meat, try tuna salad or egg salad, and put it on "different" bread, like croissant rolls, pita pockets, or Italian bread. Keep fruit (canned for now, fresh when summer gets here) on hand for snacks for the kids. Or raw veggies and dips. You can also cook those shortcut carrots until they are soft, then Tristan could handle them too. I used to cook them and store them in the fridge, and Katy ate them cold that way.
