Chedder Sage Bread

*Absolutely delicious as bread for grilled cheese!

1/2 tsp dry mustard
3 tbls fresh sage, minced
3-3 1/2 cups flour (I prefer bread flour, but all purpose will work just fine)
1 1/2 tsp salt
1 tsp coarse black pepper
1 cup milk
3 oz shreeded sharp chedder
1 pkg active dry yeast
1 tbls sugar
1 tbls oil
1 egg
2 tbls butter

Dissolve mustard in 1 tsp. warm water. Comine 3 cups flour with salt, pepper, and sage. Warm the milk.

In a large mixing bowl combine the milk, yeast, sugar, and oil. Stir or process to combine. Add the egg and mix well. Add mustard and flour mixtures, adding more flour as necessary so mixture forms a stiff sough and comes together in a ball. Incorporate cheese into dough.

Turn dough out onto floured work surface and knead until smooth and elastic, adding more flour as necessary, about 10 minutes.

Put dough in a lightly buttered bowl and turn to coat top. Cover and let rise until doubled, about an hour. Punch down, shape in a loaf, put in buttered loaf pan. Cover with plastic wrap and let rise until doubled, another hour.

Heat oven to 375. Melt butter. Brush loaf with melted butter and bake until loaf is golden brown, about 50 minutes. Cool on rack.

40 Min. Hamburger Buns

INGREDIENTS

2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water (110° to 115°)
1/3 cup vegetable oil
1/4 cup sugar
1 egg
1 teaspoon salt

3 to 3-1/2 cups all-purpose flour

Directions:

In a mixing bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Cover and let rest for 10 minutes. Bake at 425° for 8-12 minutes or until golden brown. Remove from pans to wire racks to cool. Yield: 1 dozen

It's COLD here!!!

I'm such a weather wimp LOL.  Guess I spent too many years aclimating to the hot Phoenix weather.  This is our 2nd winter here and it's still such a shock to see 5 degrees on the thermometer.  When I woke up (at 2:30 a.m. Yikes!) it was 19 degrees and as the morning has progressed the mercury is falling. We're supposed to have some snow showers sometime today.  The dc will love it, the excitement and novelty of snow still hasn't worn off for them.

 

Catalog heaven!  Dh brought in a nice little stack of catalogs from the mail when he came home from work this morning.  McMurray Hatchery (we just put 24 eggs in our incubator), a seed catalog (hard to imagine a garden when I'm huddled in front of a nice fire w/hot cocoa), NG magazine and one of my favorites....Victorian Trading Co.. I adore anything Victorian as does my almost 12 yr. old dd.

 

We started our new school year a week ago and my oldest twins (3 next wk.) have joined us.  They were chomping at the bit to become "official" and I've started them on the SL pre-k curriculm.

 

As you can see I'm back to blogging and also blogging over at homeschool blogger.  I'm experiencing template frustration over there as I accidently cut out my counter and cbox and can't get them back up and running again...when I add the code and "save" the change doesn't stick.

 

Now to go check out some blogs and see what everyone else is up to :)

PEACH AND BLACKBERRY CRISP

1-1/2 pounds peaches (about 3), pitted and cut into 1/2-inch thick wedges
2 cups blackberries, picked over and rinsed
1 tablespoon cornstarch
2 tablespoons fresh lemon juice
1/3 cup granulated sugar
2/3 cup all-purpose flour
3/4 cup firmly packed light brown sugar
1/2 cup old-fashioned rolled oats
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
3/4 cup coarsely chopped lightly toasted pecans
peach and brown sugar ice cream or vanilla cream as a topping (optional)

In a large bowl toss the peaches and the blackberries gently with the cornstarch, the lemon juice, and the granulated sugar until the mixture is combined well. In a small bowl stir together the flour, the brown sugar, the oats, the salt, the cinnamon, and the nutmeg, add the butter, blending the mixture until it resembles coarse meal, and stir in the pecans. Spread the peach mixture in a 13- by 9-inch (3 quart) baking dish, sprinkle the pecan mixture evenly over it, and bake the crisp in the middle of a preheated 350°F. oven for 45 to 50 minutes, or until the top is golden. Serve the crisp with the ice cream.

Sunday On The Farm

It’s a beautiful, clear and delightfully cool morning. I’m sitting out here on the deck w/coffee and my laptop. Normally I don’t like to type on it but it’s so quiet and peaceful right now that I’m going to stay out here for a bit. Brock and Scooby love it when I come out here early in the morning because they get to run off and play w/the Anatolians for a bit. For those new to this blog: Brock is my English Mastiff overgrown pup, Scooby is Alex’s gangly Great Dane pup (my dad gave him to Alex for his 6th b-day in May) and Aslan and Antoine are our Anatolian shepard LGD dogs. Brock and Scooby are inside dogs and the Anatolians stay outside working.

Yesterday afternoon and last night was busy w/the arrival of new baby animals. Our female rabbit had 7 healthy babies (we bought a doe that had already had 1 litter successfully therefore giving us newbies a better shot at a good outcome) and our expecting goat had Twins. Our little "herd" has expanded wonderfully. We’ll probably only be keeping the girls, have to make a firm decision in a couple wks.

A few days ago a lady asked me about meat chickens and I told her what I knew of the "crosses". Well, I’ve been thinking about it ever since and have decided that instead of waiting until after winter is over I’ll go ahead and see about getting some now. The amount of chicken we go through is unbelievable and currently we’re still supplementing w/store bought.

Plans for today include:

*before 9a.m. routine

*normal daily maintenance chores

*Aja, Tony, dh & I off to church – early service

*depending on weather, work in the garden

*finish cute little outfit for Arissa

*dds will be making pizza dough to put in freezer

*playtime w/the Littles

*board game or 2 w/middles before dinner

*go out for coffee w/dh after dinner

*spend some time w/teens

Pumpkin Maple Biscuits

Pumpkin Maple Biscuits

 

*We made up a test batch and these are a new family favorite



Pumpkin biscuits are perfect for breakfast, brunch or even to serve with an early supper. Topped with Pumpkin Maple Sauce they're perfect companions for stews and soups.

Servings: 12

Ingredients

2 1/2 cups all-purpose baking mix
1/3 dry cup instant nonfat dry milk
1/4 packed cup brown sugar
1 1/4 teaspoons pumpkin pie spice
3/4 cup  pure pumpkin (canned or homemade)
1 tablespoon water
1 recipe pumpkin maple sauce (recipe follows)


Directions


PREHEAT oven to 425° F.

COMBINE baking mix, dry milk, sugar and pumpkin pie spice in medium bowl. Stir in pumpkin and water just until moistened.

KNEAD dough 10 times on lightly floured surface. Roll dough to 1/2-inch thickness; cut into 12 biscuits. Place biscuits on ungreased baking sheet about 2 inches apart.

BAKE for 8 to 10 minutes or until golden brown. Spoon sauce over warm biscuits.

FOR PUMPKIN MAPLE SAUCE
HEAT 1 cup maple syrup, 1 cup  pure pumpkin puree and 1/4 teaspoon ground cinnamon in small saucepan until warm.

Thinking about Christmas already...

About this time every year I begin to think about Christmas...baking, candy making, gifts to sew for the family.

 

Last evening I came across a really easy recipe for fudge that I thought I'd share here:

 

Super-Easy Rocky Road Fudge

Ingredients

2 (12-oz. pkg.) cups NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels
1 (14 oz.) can CARNATION Sweetened Condensed Milk
1 teaspoon vanilla extract
3 cups miniature marshmallows
1 1/2 cups coarsely chopped walnuts

Directions

LINE 13 x 9-inch baking pan with foil; grease lightly.

MICROWAVE morsels and sweetened condensed milk in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in vanilla extract. Fold in marshmallows and nuts.

PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.

3. tree to sit under is… large pine tree in that provides some nice shade for our deck

4. restaurant chain is… Outback

5. room in the house is… the kitchen, I feel it is the heart of the home. I’m going to especially love the kitchen in our new house when it’s finished…set in wood burning stove, so I can try out recipes from old cookbooks besides, large enough appliances so meals for our large family can be conveniently prepped & cooked and decorated Just the way I want.

 

 



Happy 4th Of July!

Yesterday was an exhausting but productive day. We ended up processing 25 chickens…nothing like filling up the freezer w/your own home-grown meat. In about another 3 wks. we’ll have 30+ more ready to be done. We also worked quite a bit in the kitchen preparing appetizers and sides for today’s party and have almost everything that could be done ahead finished. We also have several batches of lasagna stashed in the freezer in case the worst case scenario happens and we get thunderstorms and can’t bbq this evening.

Once we get our regular morning animal and house chores out of the way we will set up the tables and chairs out on the deck and lawn and do any remaining straightening up of the house that’s needed.

Weekend On The Farm

The Big news…Jessica is expecting Twins! They got back from the townhouse yesterday afternoon (picked up my dad & Fran from airport on the way) and gave us the great news. Other than her showing earlier this time around there has been no clue that she might be expecting more than 1 cutie. The lucky girl has had almost no morning sickness, which makes Aja and I quite envious.

Yesterday was an absolutely gorgeous day…hope the 4th turns out as well w/no afternoon thunderstorms and rain like we’d gotten several days in a row. Aja and Tony went over to dad & Fran’s house to freshen it up and took some of their favorite meals to put in the fridge.

Some other things we did yesterday:

*before 9a.m. routine
*daily maintenance chores
*started batch of cheese
*light morning of school
*made another batch of strawberry jam
*went riding w/Nicole
*a bit of work on the gardens…the weeds loved the rain
*relaxed a bit before taking middles & teens to see a fireworks show at one of the big churches in the city. We considered taking the 2 yr. olds (Angela, Allison and Gabe) but decided to wait another year.

Today we’re going to have a fairly relaxing day w/just basic maintenance chores, pursuing hobbies and messing around w/the animals (one mama goat had her baby 2 days ago!). Oldest dds and hubbies will be heading off to church after breakfast (we alternate wks. of who goes and who stays home w/the Littles).

Basic plan for the day:

*before 9a.m. routine

*daily maintenance chores

*prep meat processing room for doing 20 chickens Monday

*sewing w/Nicole

*groom horses and work w/Percheron

*spend time outside w/middles and Littles

*games and a movie in the evening

Blackberry Roll

We'll be making a couple of these for our big open house and bbq on the 4th:

 

BLACKBERRY ROLL

2 cups blackberries, drained
3/4 cup sugar
2 tsp lemon juice
2 cups flour
1/2 tsp salt
1 cup shortening
2 TBL sugar
Water enough to mix well (stiff dough)

Blend blackberries, sugar & lemon juice. Combine flour, salt, shortening, sugar & water to make dough. Roll dough out smoothly. Spread with blackberries. Roll up the dough into a nice roll. Bake in a moderate 325° (preheated) oven 25-30 minutes. Serve with ice cream.~~

Old Fashioned Baked Beans

Prep: 10 min. Total: 14 hrs.

 

2 lbs dried navy beans (4 cups), sorted and rinsed

10 cups water

3 cups water

2/3 cup packed brown sugar

2/3 cup molasses

1 Tbsp. Yellow mustard

2 tsp. Salt

1 large onion, chopped (1 cup)

  • Place beans and 10 cups water in 6-quart Dutch oven. Heat to boiling over high heat; reduce heat to low. Cover and simmer 2 hours. Drain and discard liquid.
  • Mix beans, 3 cups water and remaining ingredients in 4-5 quart crock pot (all mine are 6 quart and work fine)
  • Cover and cook on Low heat setting 10-12 hours. Beans will hold on Low heat setting up to 1 ½ hours; stir occasionally.

20 servings

For variety: add 1 cup chopped, smoked ham or ½ cup chopped, cooked bacon

Our freezer is loaded w/pork from processing 2 of our pigs over the past few months.

 

Crockpot California Pork Chops With Rice

4 bone-in pork loin chops (1" thick)
1 to 2 tablespoon vegetable oil
1 garlic clove, minced
1/4 cup soy sauce
1/4 cup red wine or chicken broth
2 tablespoons brown sugar
1/4 teaspoon crushed red pepper flakes
1 tablespoon cornstarch
1 tablespoon cold water
Hot cooked rice

In a skillet, brown pork chops on both sides in oil; transfer to a crock pot. Add garlic to drippings; cook and stir for about 1 min. or until golden. Stir in soy sauce, wine or broth, brown sugar and red pepper flakes; cook and stir until sugar is dissolved. Pour over chops. Cover and cook on low for 7-8 hrs. or until meat is tender. Remove chops. Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Return chops to crock pot. Cover and cook for at least 30 min. or until slightly thickened. Serve over rice.
Makes 4 servings

9:30 a.m. Tues.

Gorgeous day here today after a little much needed rain that came along w/the thunderstorms late yesterday. It’s going to be another very busy day today (I used to think the days were busy down at the town houses…now it seems like nothing LOL). Oldest dds and I will be spending most of the early morning in the kitchen and then off to do outside stuff that the teens don’t get to. Michael and Brian do all the barn chores each morning along w/helping w/the milking and then they take care of the rabbits, which are their special project.

We had 33 chicks hatch out of 36 eggs and they’re now happily scratching and chirping in the brooder in the attached garage. We put in 48 eggs to incubate this morning. At the rate this family devours food we have to keep the chickens coming! We’re also expecting one of our goats to give birth any day now which is exciting and I’m hoping she’ll do it in the daytime so the dc can see the baby/babies right afterwards.

Plans for the day

Prosciutto Cheese Bread

*From Fran's Files

1 Package (2 1/2 Teaspoons) Active Dry Yeast
1 Tablespoon Olive Oil
2 1/2 Cups All-purpose Flour
1/2 Teaspoon Both Salt And Black Pepper
4 Ounces Prosciutto, Cut Into Small Dice
2 Ounces Provolone, Cut Into Small Dice
3/4 Cup Grated Parmesan Cheese


Sprinkle the yeast over a cup of warm water and let sit until bubbly, about 5 minutes. Add the oil, flour, salt and pepper, and mix with a wooden spoon until a workable dough has been formed. Knead by hand on a lightly floured surface for about 10 minutes until you have created a smooth dough. If the dough seems sticky as you are kneading it, add a little more flour. Oil a large bowl twice the size of the bread, and place the dough in the bowl, cover it with plastic wrap, and let it rise in a warm spot until doubled, about 1 1/2 hours.

Oil a baking sheet, and place the dough in the center. Flatten the dough with your hands, and spread the meat and cheese over the top. Fold the dough over to cover the meat and cheese, and then flatten and fold the dough over a few times with your hands to distribute the ingredients throughout the bread.

To shape, either form the dough into a large oval shape, or cut the dough into two pieces, roll each into a 24 inch rope, and loosely twist the ropes together, sealing the ends together so you have one large ring. Cover with plastic wrap once more, and let sit to rise until doubled once more, about 1 hour.

Preheat the oven to 400 degrees F. Bake the bread for 30 minutes, or until it is a nice golden brown in color. Cool on a wire rack, and then slice when still slightly warm.

Variation: You can brush the bread with a glaze of 1 egg yolk beaten with 1 tablespoon of water to give the bread a shiny surface.

Tam, homeschooling/homesteading mom to 14 fantastic blessings

We had a big cooking/baking day here today to fill up the freezers w/more lunch meats and snack food (a turkey, 2 chickens in crockpots, banana nut bread, sandwich loaf, variety of muffins and cookies). I’m also having a lot of fun browsing through Fran’s recipe file….she left it for Aja and I to enjoy while she’s gone.

The wedding last Saturday was lovely and the newlyweds (my dad and son-in-law's mom Fran) enjoyed their honeymoon in Hawaii. They’re now going to spend a week in Wa. and will be back here next Sunday.
Here’s some of what we’ve done around here today:

*Before 9:00a.m. routine done
*Normal daily maintenance chores
*Got the turkey in one oven, chickens in crock pots and started the baking
*dusted and vacuumed family room, living room and library
*Gardening while Littles played in the sprinkler

*Everything set up for the estimated 36 new chicks that will be hatching tomorrow
*I did some prep work for school, which will be starting back up next Friday
*Dh took middles to library and park
*Read alouds w/Littles and middles
*Early dinner and evening animal chores finished
*Dh is playing w/the Littles now and will be getting them bathed and off to bed in a little while.

The rest of the evening will probably be spent putting together a puzzle w/middles and popping in a dvd for the rest of us later on once middles go to bed.

L: Beef & cheese burritos (using shredded leftover roast beef) and chips

D: Savory glazed pork chops, rice, steamed asparagus, rolls and strawberry shortcakes

Thurs.

B: Southwestern omelets, link sausage and toast

L: Baked potato bar

D: Spaghetti Carbonara, Cobb salad, parmesan bread sticks and cookies

Fri.

B: Granola bars and fruit smoothies

L: Sandwiches – coldcuts and chips

D: Bbq pork sandwiches, mac & cheese, coleslaw and chocolate pudding

Sat.

B: Chocolate chip pancakes

L: Leftover buffet

D: Crockpot meatloaf, mashed potatoes and gravy, sweet peas, biscuits and Black forest brownie pie

Sun.

B: H’made doughnuts and fruit

L: Turkey sandwiches and veggie tray w/dips

D: Crock pot roast w/mushrooms, carrots and potatoes, salad, h’made Challah bread and lemon meringue pie
