Thin Pizza Crust

Most Friday nights I make homemade pizza using just a few ingredients (and my mill).  My guys love my pizza crust so I thought I would share.

1 C warm water

2 Tbsp oil (I use safflower)

2 tsp sugar

1/2 tsp salt

1pkg quick rising yeast

3C wheat flour (2 cups if using freshly milled wheat-if you're not, you should)

Preheat oven to 450.  I find it's best to put the yeast in the bowl first then add the oil, sugar, & salt, mix.  Then add the water, mix.  Last add the flour slowly.  Mix all ingredients throroughly.  If you have done this in a stand mixer put on the kneading attachment and knead until a ball forms.  If kneading by hand, knead for 3-4 times.  Let rise for 1 hour.  Separate dough in half.  Place on 2 buttered/sprayed pans and spread out evenly on the pans.  Place in oven for 2 1/2 minutes.  Switch the pans and cook for another 2 1/2 minutes.  This will allow for even cooking.  Then put whatever toppings youd like and bake for total of 8 minutes though I switch halfway through baking.

Oh, happy day! I just love thin and crispy crusts and I'd love to try making my own. Thanks so much for sharing the recipe and easy directions! :oD
