This past week, I used spaghetti squash in place of pasta. Now, my husband is fairly picky, but he is willing to give new things a try. And spaghetti squash has his stamp of approval!

 

I’m really excited by this, as this is a type of winter squash. It should be easy to grow and it should keep into the winter months fairly well.

 

Even though we have just two boys, I enjoy dreaming about the future and finding ways to feed a large family. And eating squash would defiantly help out, if I can find types and ways of cooking them that we can enjoy.

 

I’m not a rabid fan of zucchini. It has a bit of a strong taste for me, even stuffed with sausage and yummy stuff, so I’m going to keep searching for a summer squash we enjoy 100% and also another winter one that we can also use in pies . . . . there are so many squash I'm determined not to "make do" when there are so many flavors and variety!

 

Spaghetti squash on the other hand, is so bland it’s almost not there, except it is, and thus it’s a really great sub for pasta.

 

For anyone who’s seed shopping, like I am, you might look at Pine Tree Seeds. Even if you order live plants or a pound of garlic, the shipping is the same. That probably means the price of shipping has been worked into the cost of the item but what I’m seeing is really some neat selections and good prices!

I only wish that we were out in the country so I could plant some berrie plants. I've already asked my mom if I can plant a few squash out on the farm so I don't have to try to grow every type I'm thinking about in my city-sized backyard! I read somewhere they do just fine (some say best) with weeds and grass growing around them and only need watered once a week. Or so. Kansas summers do get pretty warm!

I'm so eager for spring! As soon as it warms up, Samuel can play in the sandbox and Elijah can play on a blanket while I putter around! Whoo hooo!

lol!! You are too funny. I am sorry some of your thigns have been swallowed. hahaha... not funny really tho. It was kinda tough. I kept thinking that if I lost something not important then I would find my earring. But thank God Dad just found it!!
