Mon-18-Aug-2008 - Hillbilly Ketchup?
I was on the phone with a friend this morning and she was telling me what she was going to be canning and I started thinking about canning my tomatoes instead of freezing them.
For one thing, we don't have much freezer space left!
So I made ketchup, the recipe right out of the Blue Ball book.
And to my friend's horror, I left the seeds in. Actually, some of the tomato skins ended up pulverized, too. Oops!
It is the most lovely, thick, creamy ketchup I've ever made!!!!!

My dad used to call a steak sauce we get here in Missouri hillbilly ketchup. The sauce is called Country Bob's and it isn't found in some stores. Dad used to love to go into a ritzy fancy resturant, order a steak and ask for the Country Bob's because most had not heard of it, or had heard of it and would gasp in horror. LOL Then one day the guy said, yes sir, coming right up. And he came back later with a large bottle of it for dad. LMSO Evidentially my father wasn't the only one asking for this hillbilly steak sauce. LOL

Oooo it sounds yummy! I'm going to try ketchup this year as well. But I'm also trying a method of storage. Basically, as you pick your tomatoes you slice the tops off, bag and freeze them. When you have enough for a batch, you take them out and let them thaw. To get the skins off, you can just pop them right out of the skin... supposedly something about freezing them makes the skin come of easily and you don't have to mess with blanching.

i want to make ketchup too. my girls would eat nothing but ketchup if I let them. it is so full of nasties (high fructose corn syrup, etc) but the natural and organic costs 2.50 a bottle! aghhh!!!
so I am going to try ketchup this year - if there is still tomatoes at the farmers market when I am feeling well enough to do something. anything.

Just tell your friend the seeds are for added fiber. I too made the Ball recipe and agree it is awesome. As for the seeds, when I read it said to deseed them - I thought not. So right before the last boil/simmer a pushed them through a strainer. Worked out very nice.
