$9 Chicken = Bunches!!
I spent $9 on 2 whole chickens. With those two chickens, I simmered them for a few hours and was able to make:
- 4 packages of shredded meat
- 1 for enchiladas
- 1 for Chinese (probably chicken & broccoli)
- 2 for ???
- 5 pints of Cream of Mushroom Soup
- 6-7 pints of chicken stock (maybe, depends on what I can get through tomorrow)
I think that's pretty good for 2 chickens totaling $9.

One way to really stretch chicken pieces/shredded, besides the 'ol BBQ sandwich of course, is chicken noodle soup and chicken potpie, (maybe you could get away with 1/2 of those 2 extra packages for each of those, and then make chicken in gravy for a mashed-potatoes meal and now, I'm stuck for another use... hmmmmm tortilla soup?
Thanks for the idea to do chicken in a way to get stock!

Good going! I need to think more along these lines. There are only DH and I at home now, but things in our nation look somewhat unstable and it is never to soon to learn to save money.

Do you have a recipe - I am looking to a healthier alternative to use in recipes than canned.
